Fritata con huauzontles

Ayer en el súper me encontré un mega manojo de huauzontle y como nunca lo he cocinado pensé que sería buena idea probarlo. Hace como 6 años fuimos a comer a Dulce Patria en Polanco y probé una tarta de queso de cabra con huauzontles deliciosa y de ahí me emocioné para comprar el manojo enorme de ayer.

Me puse a investigar qué se puede hacer con huauzontle y el resultado de mi búsqueda fue decepcionante. Resulta que sólo hay tortitas de huauzontle capeado como chile relleno en diferentes salsas o huevos con huauzontle. Como es la primera vez que lo cocino lo hice como todo mundo me dijo; en huevo, pero en fritata que le puedo poner un poco de ondita que nada más hacerlo con huevo revuelto.

También me puse a ver los beneficios que tiene, pues lo comparan al amaranto y se considera un legado de México al mundo. Y resulta que el huauzontle es un súper food con mucho calcio, hierro, proteínas, fósforo, muchas vitaminas A,B, y sobre todo C y una alta cantidad de fibra fácil de digerir. Así que me emocioné más. Ahora que ya los probé voy a ver qué más se me ocurre hacer y voy a ver si encuentro algo que se parezca a la tarta que probé hace tiempo.

Hice la fritata salteando los huauzontles con ajo y cebolla y nada más. Y siguiendo con el mood de la semana de apapachar a los enanos, les hice hash brown con kale para acompañar.

Fritata de huauzontles

Fritata con huauzontles

INGREDIENTES

3 porciones

4 huevos orgánicos

1 ½ taza de huauzontles (sólo los arbolitos, sin los tallos duros)

¼ taza cebolla morada picada

1 diente de ajo machacado

1 cucharadita de ghee

2 cucharadas de aceite de coco

Sal y pimienta al gusto

 

INSTRUCCIONES

  1. Precalentar el horno a 180°
  2. Calentar un sartén chico que se pueda meter al horno y agregar el ghee y el aceite de coco
  3. Saltear la cebolla por 2 minutos
  4. Agregar el ajo y saltear por 30 segundos
  5. Agregar los huauzontles y cocinar por 5 minutos
  6. Sazonar con sal y pimienta
  7. Batir los huevos y sazonar con sal y pimienta
  8. Agregar los huevos a los huauzontles y dejar que se cocine
  9. Una vez que los bordes se ven medio cocidos meter la fritata al horno y hornear por 5 minutos o hasta que el centro se vea cuajado
  10. Servir inmediatamente

 

JUGO VERDE

Poner en el extractor 1 manzana verde, 1 puño de espinaca, 2 cm de jengibre, 2 tallos de apio, ½ betabel, 2 zanahorias. Agregar el jugo de un limón y tomar de inmediato en ayunas antes del desayuno.

Huauzontle fritata and another green juice

Yesterday at the supermarket I found a humongous bunch of huauzontle and since I have never cooked it before, I thought it would be a good idea to try it. About 6 years ago I went to have lunch at the restaurant Dulce Patria in Polanco and I had a goat cheese and huauzontle tart that was amazing and from that memory I got the excitement to buy the huge bunch yesterday. I did some research on the type of recipes and dishes you can make with huauzontles and the results were disappointing. It turns out that there are only patties coated in egg like chiles rellenos with different sauces and mixed with eggs. Since it is the first time I cook them I decided to go for the eggs, since the other way involves a lot of flour and deep frying; I did a fritata that allows me to put a few tweaks in it and not just making scrambled eggs.

I also did some research on the benefits of huauzontles since they are compared to amaranth and some declare it to be a legacy from Mexico to the world. It turns out huauzontles are a super food with a lot of calcium, phosphorus, iron, protein and bunch of vitamins like A, B and C and a high amount of fiber that is easy to digest. So I got more excited. Now that I have tried them let’s see what I come up with and I will try to do something like the goat cheese and huauzontle tart I had years ago.

I made the fritata sautéing the huauzontles in garlic and onion. And continuing with the mood to pamper kids I served it with a hash brown with kale and turmeric.

Huauzontle fritata

INGREDIENTS

3 servings

4 organic eggs

1 ½ cup huazontles (just the tiny trees and not the hard stems)

¼ cup purple onion chopped

1 garlic clove minced

1 teaspoon ghee

2 tablespoons coconut oil

Salt and pepper to taste

 

INSTRUCTIONS

  1. Preheat the oven at 180°
  2. Heat a small pan that can go into the oven and add ghee and coconut oil
  3. Sautee onion for 2 minutes
  4. Add garlic and cook for 30 seconds
  5. Add huauzontles and cook for 5 minutes
  6. Season with salt and pepper
  7. Beat eggs in a bowl and season
  8. Add eggs to pan and mix
  9. Let cook until the border looks set
  10. Put in oven and cook until the center looks set
  11. If not thoroughly cooked put back in oven
  12. Serve immediately

 

GREEN JUICE

Put 1 green apple a fist of spinach, 2 cm of ginger, 2 celery sticks, ½ beet, and 2 carrots into the juicer. Add the juice of 1 lemon and drink immediately before breakfast.
