Sopa de champiñones rápida

Las sopas son una excelente cena, sobre todo para toda la onda sana, pues te llenan, pero son muy nutritivas y sanas y son una excelente forma de comer verdura como mi sopa de jitomate italiana, de calabaza, mi minestrone o mi sopa miso.

Esta sopa la conocí en el último detox que hice en enero y la verdad fue un hitazo para mí y mi esposo, pues el sabor a chipotle siempre hace que todo sepa mejor, pero lo mejor lo mejor es que la hice en 10 minutos, lo cual es maravilloso.

La puedes comer de cena o en la comida y de cualquier forma es muy rica.

Esta sopa la acompañé de quinoa al horno con poblano y de postre pie rápido de manzana.

Sopa de champiñones rápida

Sopa rápida de champiñones

INGREDIENTES
4 porciones

2 cucharadas de aceite de coco

¼ de taza de cebolla finamente picada

1 diente de ajo machacado

150 gr de champiñones picados

1 lt de caldo de pollo orgánico

1 cucharada de chile chipotle molido

 

INSTRUCCIONES

  1. Calentar el aceite y freír la cebolla por 5 minutos
  2. Agregar el ajo y cocinar por 30 segundos
  3. Agregar los champiñones y dejar cocinar por 5 minutos
  4. Agregar el caldo y el chipotle
  5. Sazonar
  6. Dejar cocinar 10 minutos
  7. Servir inmediatamente

Quick mushroom soup

Soups are a great dinner, especially if you are into the healthy thing: they fill you, and are very nutritious and healthy and they are a great way to eat more veggies like my Italian tomato soup, my minestrone, my zucchini soup or my miso soup.

I got this recipe from the last detox I did back in January and it was a hit for me and my husband, since the chipotle always makes everything taste better, but the best part is that I made it in 10 minutes, which works great with me.

You can have it as a dinner or lunch and it is great for both.

I served this soup with my baked quinoa with poblano pepper and as a dessert I made a quick apple pie.

Quick mushroom soup

INGREDIENTS

4 servings

2 tablespoons coconut oil

¼ cup finely chopped onion

1 garlic clove minced

150 gr chopped mushrooms

1 lt organic chicken stock

1 tablespoon chipotle peppers

Sopa de champiñones rápida

INSTRUCTIONS

  1. Heat oil and fry onion for 5 minutes
  2. Add garlic and cook for 30 seconds
  3. Add mushrooms and cook for 5 minutes
  4. Add stock and chipotle
  5. Season
  6. Let cook for 10 minutes
  7. Serve
