Merengues de mocha

Tengo un montón de claras de huevo de mi clase de panadería y pasta choux, usamos como 11 yemas, así que me quedé con 11 claras y no somos muy fans de los omelettes de puras claras y desde hace tiempo tengo ganas de hacer merengues, así que fue la oportunidad perfecta.

El merengue es un postre maravilloso y que puede combinar con muchos sabores; es fácil y rápido de hacer, lo puedes hacer una miles de distintos sabores, desde natural, con esencias de frutas o con trozos de chocolate o nueces. Esta vez me fui por sabor mocha, así que combiné mi súper café chiapaneco instantáneo orgánico y cacao natural.

Estos merenguitos son ideales para el té de la tarde o cuando tienes invitados para el café.

Merengues de mocha

INGREDIENTES

40 merenguitos

3 claras de huevo orgánico

¼ cucharadita de crémor tártaro

¾ taza azúcar estándar orgánica

2 cucharaditas de café instantáneo

1 cucharada de cacao en polvo

 

INSTRUCCIONES

  1. Precalentar el horno a 150°
  2. En la batidora empezar a batir las claras hasta que estén espumosas
  3. Agregar el azúcar poco a poco y seguir batiendo hasta que se formen picos firmes
  4. Agregar el cacao y café poco a poco hasta que queden bien incorporados
  5. Con una duya formar los merenguitos en dos charolas con papel encerado o tapetitos de silicón
  6. Meter al horno por 40 minutos o hasta que estén cocidos, dándole la vuelta a la charola a la mitad del tiempo
  7. Dejar enfriar en la charola porque si se despegan antes el fondo se pega

I have many egg whites left from my bread and pate choux class, we used like 11 egg yolks, so I was left with 11 egg whites and we are not particularly fans of egg white omelettes and I have been wanting to make merengue for a while now, so it was a great opportunity.

Meringue is a wonderful dessert that can combine a lot of flavors; it is easy and quick to make and you can make them in many flavors from natural from fruit essences, chocolate chips or nuts. This time I went for mocha, so I combined my awesome Chiapas instant organic coffee with natural cacao.

These little meringues are ideal to have for tea or when you have guests for coffee.

Mocha meringue bites

INGREDIENTS

40 meringue bites

3 organic egg whites

¼ teaspoon cream of tartar

¾ cup standard organic sugar

2 teaspoons instant coffee

1 tablespoon natural organic cacao

INSTRUCTIONS

  1. Preheat the oven at 150°
  2. In the stand-up mixer beat egg whites until frothy
  3. Add sugar a little at a time and keep beating until the meringue forms stiff peaks
  4. Add cacao and coffee until well combined
  5. With a piping bag form the bites in a baking tray with wax paper or silicon pats
  6. Bake for 40 minutes or until cooked through
  7. Let cool completely on the tray, if these are removed while hot they will stick to the tray
