Papas cambray rápidas

Hoy el huerto nos dio una buena noticia, ya tengo flor de calabaza, lo que quiere decir que ya pronto cosecharé mis calabazas y tendré las flores para rellenarlas. También ya pude cortar acelga para mi jugo de verdura y estuvo delicioso. Estoy requete emocionada y ya quiero empezar a cocinar con mis verduras caseras. De hecho el sábado llega el nuevo huerto para que las calabazas vivan felices y no le quiten espacio a las demás verduras.

Estas papas fueron resultado de la improvisación pues todo salió mal para la comida y tuve que hacer algo muy rápido y rico. Y así que estas papas son muy sencillas y rápidas de hacer y los niños las aman. Se hierven y luego se sazonan con caldo de pollo, mantequilla y cilantro.

Hice estas papas como acompañamiento para mi salmón al horno con spread de espinacas.

Papas cambray rápidas

INGREDIENTES

6 porciones

30 papas cambray lavadas

3 tazas agua

1 cucharada mantequilla

¼ taza caldo de pollo orgánico

1 cucharada cilantro finamente picado

2 cucharadas queso asiago o parmesano

Sal y pimienta al gusto

 

INSTRUCCIONES

  1. Hervir las papas en el agua con sal por 25 minutos o hasta que un cuchillo entre fácilmente
  2. Colar las papas y tirar el agua
  3. Poner la mantequilla y caldo en un sartén hasta que se derrita la mantequilla
  4. Agregar las papas y cubrir con el caldo y mantequilla moviendo constantemente hasta que el caldo se consuma y las papas se empiecen a dorar
  5. Retirar del fuego y agregar el queso, cilantro y sazonar con sal y pimienta
  6. Servir calientes

Quick cambray potatoes

Today I got good news from my orchard, I have zucchini flowers, which means I will soon harvest my zucchinis and I have the flowers to stuff them. I also cut my chard for my juice and it was delicious. I am very excited and I want to start cooking with my home grown veggies. Actually, the new orchard is delivered this Saturday so the zucchinis can live happily and they don’t eat up the space of the other veggies.

These potatoes were the result of improvisation, since everything went south for lunch and I had to make something quick and tasty and there are just that, quick and tasty and kids love them. They are boiled and then seasons with chicken stock, butter and cilantro.

I served them as a side for my baked salmon with spinach spread.

Quick cambray potatoes

INGREDIENTS

6 servings

30 washed cambray potatoes

3 cups water

1 tablespoon butter

¼ cup organic chicken stock

1 tablespoon finely chopped cilantro

2 tablespoons asiago or parmesan cheese

Salt and pepper to taste

INSTRUCTIONS

  1. Boil potatoes in the water with salt for 25 minutes or until you can stick a knife into them easily
  2. Strain potatoes and discard water
  3. Put butter and stock in a pan until butter melts
  4. Add potatoes and cover with stock and butter moving constantly until the stock is consumed and the potatoes start to brown
  5. Take off fire and add cilantro, cheese, salt and pepper
  6. Serve hot
