Seguimos en el arranque de año y está siendo complicado para mis hijos dejar el ponche y los churros y todos los postres que les regalaron y la rosca de reyes. Lo que básicamente quiere decir que quieren seguir comiendo dulce. Ahora, ya acabó la temporada de comer lo que queramos y regresar a una vida casi sana.
Así que hice estos cupcakes. Llevo unos dos meses comprando harina de almendra extra fina, pues, aunque hago la mía moliendo las almendras, me da la peor flojera remojarlas, pelarlas, dejarlas secar y molerlas para tener harina de almendra sin cáscara y súper fina. Así que encontré una harina de almendra en Costco y es una maravilla. Quité la mantequilla y puse aceite de oliva y usé miel de maple en vez de azúcar.
Ahora, estuve a dos segundos de dejarlos así y de ponerles ganache de chocolate como cubierta, peeeeero durante diciembre nos regalaron varias bolsitas de Lindt que me encantan y pos que aprovecho y le pongo una trufa en el centro a cada cupcake. Obviamente este paso te lo puedes saltar y dejarlos así, o hacer ganache de chocolate (crema con chocolate) y cubrirlos cuando estén fríos o hacer bolas del ganache y congelarlas y ponerlas en el centro.
Los chamacos fueron muy felices y amaron el centro líquido de la trufa así que fueron un éxito. Y ahora estoy haciendo un compilado de postres menos malos o sanos que tengo en el blog, para que arranquemos el año con ideas para dar postres ricos sin toda el azúcar y harina que luego tienen.

Cupcakes de chocolate sin harina con centro líquido
INGREDIENTES
14 cupcakes
3 tazas harina de almendra (puede ser de almendras molidas o harina de almendra que venden)
½ taza cocoa
½ taza aceite de oliva
4 cucharaditas esencia de vainilla natural
2 cucharaditas polvo para hornear sin aluminio
4 huevos orgánicos
½ taza de leche de cualquier tipo (yo usé de vaca baja en grasa orgánica)
¼ taza miel de maple
¼ cucharadita sal de mar
14 trufas de chocolate amargo Lindt (envoltura negra) o un trozo de chocolate caliente o bolitas de ganache congeladas o puedes omitir este ingredientes.
INSTRUCCIONES
- Precalentar el horno a 180°C
- Mezclar el aceite de oliva con la miel de maple
- Mezclar la harina de almendra, cocoa y sal
- Agregar los huevos y batir uno a la vez
- Agregar la vainilla y batir
- Agregar la mitad de la mezcla de harina
- Agregar la mitad de la leche
- Agregar el resto de la harina y la leche
- En un molde para cupcakes poner capacillos
- Rellenar a la mitad con la mezcla
- Agregar una trufa Lindt sin presionarla para que no toque el fondo
- Agregar dos cucharadas de mezcla extra para cubrir la trufa
- Hornear por 15 a 25 minutos (depende de tu horno) hasta que las orillas del cupcake estén firmes o un palillo casi en el centro salga limpio
- Dejar enfriar
- Guardar en un tupper hasta por 7 días

Flourless chocolate cupcakes with liquid center
We are still at the beginning of the year and it is difficult for my children to leave the ponche and churros and all the desserts people gave them and the wise men bread. Which basically means they want to keep eating sweets. Now, the season of eating whatever we want is over and we need to return to an almost healthy life.
So I made these cupcakes. I have been buying extra fine almond flour for about two months, because, although I do mine by grinding the almonds, I don’t feel like soaking, peeling, letting them dry and grind them to have super fine almond flour without the peel. So, I found an almond flour in Costco and it’s really good. I substituted the butter for olive oil and used maple syrup instead of sugar.
Now, I was two seconds away from leaving them like this and putting chocolate ganache as a topping, buuut during December we got several bags of Lindt truffles that I love and so, I took them and I put a truffle in the center to each cupcake. Obviously, you can skip this step and leave them like this or make chocolate ganache (chocolate and cream) and cover them when they get cold or make ganache balls and freeze them and put them in the center.
The little ones were over the moon with these and loved the liquid center of the truffle so we can call these a success. And now I’m making a compilation of less bad and healthy desserts that I have on the blog, so that you can start the year with ideas to give delicious desserts without all the sugar and flour.

Flourless chocolate cupcakes with liquid center
INGREDIENTS
14 cupcakes
3 cups almond flour (can be ground almonds or almond flour from a brand )
½ cup cocoa
½ cup olive oil
4 teaspoons natural vanilla essence
2 teaspoons baking powder without aluminum
4 organic eggs
½ cup milk of any kind (I used cow organic low-fat)
¼ cup natural maple syrup
¼ teaspoon sea salt
14 Lindt dark chocolate truffles (black wrap) or a piece of dark chocolate or frozen ganache balls or you can skip this ingredient.
INSTRUCTIONS
- Preheat the oven to 180°C
- Mix olive oil with maple syrup
- Mix almond flour, cocoa and salt
- Add the eggs and beat one at a time
- Add vanilla and beat
- Add half the flour mixture
- Add half the milk
- Add the rest of the flour and milk
- In a cupcake tin add cupcake liners
- Fill in with half the mixture
- Add a Lindt truffle without pressing it so it doesn’t touch the bottom
- Add two tablespoons of extra mixture to cover the truffle
- Bake for 15 to 25 minutes (depends on your oven) until the edges of the cupcake are firm or a toothpick almost at the center comes out clean
- Allow to cool
- Save in a tupper for up to 7 days
