Pan de muerto = El mejor pan del mundo. PUNTO
Soy adicta al pan de muerto y es de esas cosas que espero todo el año y que por el tema de la insulina como una o dos veces y punto, porque de por sí me cuesta muchísimo bajar de peso y sigo con mi tratamiento, pero es de las pocas cosas que realmente sufro por no poder atascarme kilos y kilos.
Hace ya 6 años tomé un curso para hacer pan de muerto y sus variantes, pero eso del amasado a mano me tomaba mucho tiempo y lo dejé de hacer. Y la verdad es que el pan de muerto lo puedes encontrar en tantos lados y con tantas variantes que no me hacía falta y debo decirles que mi favorito, por ser el más tradicional y sin cosas que, desde mi punto de vista, ni al caso con el pan de muerto como rellenarlos de fruta y nata, hacerlos de sabores, etc., es el de Azúcar, que además venden en tamañito chiquitito para controlar las porciones y del cual soy mega fan.
Pero este año, me pidieron en varios lados que hiciera pan de muerto y pues aquí lo tienen. Hace ya muuuucho tiempo que no hacía pan de muerto, así que lo hice hoy con la idea de que fuera la prueba para ver si me quedaba bien, y ¿qué creen? ¡Que me quedó espectacular! Así que este viernes que tenemos el huateque de Halloween y tenemos a 60 niños pidiendo dulces, lo voy a volver a hacer ahora en versión minis.
Subo hoy la receta para que tengan tiempo de hacerla antes del 2 de noviembre. En serio vale la pena y si tienen batidora o Thermomix se hace en muy poco tiempo.
El ingrediente que distingue al pan de muerto es la esencia de azahar u orange blossom y agregar un poco de cáscara de naranja a la masa. La esencia la consiguen en cualquier tienda de reposterías, y más en esta época que hay pan de muerto por todos lados. También en tiendas de comida árabe a veces la encuentran.
Como cualquier otro pan con levadura hay que darle su tiempo para que se esponje dos veces antes de meterlo al horno, así que cuando lo hagas trata de hacerlo con tiempo y sin prisas. Yo lo hago en Thermomix, por eso de la amasada que toma como 25 minutos a mano, y así aprovecho a Robotina, pero les pongo ambas formas de hacerlo en las instrucciones.

Pan de muerto
INGREDIENTES
2 panes grandes
½ taza de azúcar
La cáscara de una naranja sin la parte blanca porque es muy amarga
¾ taza de leche
3 huevos
1 sobre de levadura seca
150 gr de mantequilla a temperatura ambiente
1 cucharada esencia de azahar
4 ¼ taza harina
½ cucharada sal
Un poco de mantequilla para barnizar
Azúcar para espolvorear
INSTRUCCIONES THERMOMIX
- Poner la ralladura y el azúcar y pulverizar a velocidad 10 por 10 segundos. A los 5 segundos bajar lo que quede en las paredes
- Agregar la leche y levadura y programar a velocidad 1, temperatura 37° por 3 minutos
- Agregar los huevos, esencia, mantequilla, sal y harina y programar 4 minutos en amasado (signito de espiga). Si es necesario a la mitad del tiempo baja lo que se pegue en la pared
- Dejar reposar por 40 minutos o hasta que doble su tamaño en el mismo vaso y en un lugar caliente
- Volver a programar 2 minutos en amasado (signito espiga)
- Enharinar una superficie y amasa con poca harina por 2 minutos
- Dividir la masa en 2 (yo hice dos panes grandes, pero la puedes dejar entera o hacerla en minis). Y de esos dos a cada mita cortar una 5ta parte para hacer los huesitos y la bola.
- Hacer el pan en forma circular y acomodar en una charola para horno con un tapetito de silicón
- De la 5ta parte que cortamos, hacer la bola del centro y los huesitos. Los huesitos se hacen amasando hasta hacer un cilindro largo y luego presionar con los dedos abiertos o irle dando vueltas a la vez que presiones en donde el huesito se hace delgado
- Barnizar el pan con mantequilla y acomodar los huesitos y la bola. Hay que tener en cuenta que el pan esponja mucho en el horno, así que hay que dejar que los huesitos se salgan de la bola de pan, para que conforme vaya creciendo, los huesitos cubran bien la superficie (cosa que a mí me falló y algunos huesitos se rompieron)
- Barnizar todo el pan con mantequilla o leche otra vez
- Dejar reposar por 30 minutos para que vuelva a fermentar la levadura
- Precalentar el horno a 180°C
- Meter el pan y dejar hornear por 30 minutos o hasta que esté bien cocido
- Sacar y dejar enfriar 5 minutos
- Derretir mantequilla, barnizar y espolvorear con azúcar
INSTRUCCIONES A MANO
- En la licuadora, moler el azúcar con la cáscara de naranja o directo hacer la cáscara ralladura
- Entibiar la leche y poner la levadura y el azúcar por 5 minutos para que esponje
- Mezclar la harina con la sal
- Agregar la mantequilla y amasar hasta que la textura quede como arena
- En una superficie hacer un hueco en el centro y agregar los huevos, esencia y levadura
- Amasar por 20 minutos y hasta que la masa esté un poco elástica (va a estar bastante pegajosa, pero no recomiendo agregar mucha harina para evitar que quede pesado el pan)
- Hacer bolita y poner en un bowl a que repose por 40 minutos o hasta que doble su tamaño en un lugar caliente
- Sacar del bowl y volver a amasar por 5 minutos agregando poca harina
- Dividir la masa en 2 (yo hice dos panes grandes, pero la puedes dejar entera o hacerla en minis). Y de esos dos a cada mita cortar una 5ta parte para hacer los huesitos y la bola.

Bread of the death= Best bread in the world. PERIOD.
I am addicted to the bread of the death and it is one of the foods I wait for the entire years. Because of my insulin problem I only eat once or twice and that is it, since it costs me a lot to lose weight and I am still doing the treatment (another year to go). This bread is one of the very few things that I truly suffer because I cannot stuff my face with it.
Six years ago, I took a course on how to make bread of the death and all its variants (which in Mexico vary from state to state), but kneading took a long time and I stopped making it. And to be honest, bread of the death can be found everywhere this time of year and with many variations, so I didn’t need to do it and I must say my favorite, for being the traditional version and without weird stuff, which in my opinion are not necessary in this bread, like fruit and milk cream fillings or different flavors, is the one from Azúcar, and they also have the mini size that helps with portion control. I am a big fan of it.
But this year, several people asked me if I could make bread of the death, so here it is. It’s been a loooong time since I last made it, and I made it today with the idea trial test it to see if I still remembered how to make it and to see if it was blog worthy. Guess what? It is spectacular! And it is now decided that, since this Friday we have our Halloween party with 60 kids coming trick or treating, I will make it in mini version.
I am posting it today, so you have enough time to make it before November 2nd (The Day of the Death). If you have a Thermomix or a mixer it is worth making and it takes very little time.
The ingredient that distinguishes this bread from any other is orange blossom water and adding a bit of orange peel to the dough. Orange blossom water can be found in any bakery supplies shop and especially this time of year is found everywhere. You can also find it in Arab food shops.
Like any other bread that uses yeast, this bread needs it’s time to proof twice before baking, so when you make it try to do it with time and without rushing. I make my bread of the death in my Thermomix, because kneading for 25 minutes is not my thing, and I take advantage of my Robotina, but I put am posting both instructions.

INGREDIENTS
2 large loafs
½ cup sugar
The peel of one orange without the white bits because it bitters the dough
¾ cup milk
3 eggs
1 envelope instant dry yeas
150 gr butter at room temperature
1 ½ tablespoons orange blossom water
4 ¼ cups flour
½ tablespoon salt
Butter to coat
Sugar to sprinkle
THERMOMIX INSTRUCTIONS
- Place peel and sugar and pulverize at speed 10 for 10 seconds. Half way take down the sugar on the wall of the vase
- Add milk and yeast and program speed 1, 37° for 3 minutes
- Add eggs, orange blossom water, butter, salt, flour and program 4 minutes on kneading (wheat symbol). If necessary stop and scrape down the sides
- Let rest for 40 minutes or until it doubles its size in a warm place
- Program for 2 minutes on kneading (wheat symbol)

- Flour a surface and knead with little flour for 2 minutes
- Divide dough in 2 (I made two large loafs but you can make just one or mini). And from those 2 halves cut a fifth of each to make the bones and ball
- Form bread into balls and place in a baking sheet with a silpat
- From the 5th of dough we cut from the dough make the ball that goes in the center and the bones. The bones you can make by forming a large rope and then pressing your open fingers to bake the little nodules or by rolling the dough at the same time you form the bones with your open fingers
- Coat the bread with butter and place the bones and ball. You need to consider that the bread grows a lot while baking and so the bones need to be larger than the bread, resting on the tray so that while the bread grows it pulls the bones (I didn’t do that and my bones came out funny)
- Coat the whole bread with butter and rest for 30 minutes
- Preheat the oven at 180°C
- Bake bread for 30 minutes or until fully cooked
- Take out and cool for 5 minutes
- Melt the butter, coat bread and sprinkle with sugar
HAND KNEADING INSTRUCTIONS
- Blend sugar and orange peel or zest the orange directly into the sugar
- Warm milk and add yeast and sugar mix for 5 minutes, so the yeast proofs
- Mix flour with salt
- Add butter and mix until it resembles sand
- In a surface make a well in the center and pour eggs, orange blossom water and yeast mixture
- Knead for 20 minutes or until dough is elastic (it will be quite sticky and I do not recommend adding tons of flour because the bread with be top dense)
- Form a ball and let rest in a bowl in a warm place until it doubles its size
- Take out and knead for 5 minutes adding very little flour
