Este desayuno lo he querido hacer desde la semana pasada, pero siempre me ganaba el tiempo con la enana de vacaciones. Este lunes se fue a dormir con su Abi y por fin tuve tiempo.
Como les había platicado en el post de huevo pochado sobre pan tostado, aguacate y espinaca, el huevo pochado me encanta y fue mi gran logro culinario de hace 2 años. Me encanta la textura y combina requete bien con muchísimas cosas, porque la yema queda cremosa y sirve como salsa para sándwiches, pastas, verduras y sobre pan.
Ahora, el lunes le hice al enano pechuga de pavo asada revuelta con aguacate y espinaca y me sobró bastante, por lo que lo usé para el relleno de mi hongo y ya encima puse el huevo pochado y lo bañé en salsa verde.
El chiste está en hornear el hongo menos de 10 minutos para que el sabor sea más intenso y ayude a que el plato sea mucho más rico. Simplemente lo barnizas en aceite de aguacate con ajo y listo.
Lo que sobró (porque les digo que me sobró muchísimo) de la mezcla de pavo, se los di a los enanos de sándwich de un pan orgánico en la noche y se lo devoraron.

Portobello relleno con huevo pochado
INGREDIENTES
1 porción
1 hongo portobello grande
1 cucharada de aceite de aguacate
1 diente de ajo machacado
1 huevo
¼ taza pechuga entera de pavo Kirkland picada (no tiene nitritos)
½ aguacate machacado
¼ taza espinaca picada
3 cucharadas de cebolla picada
INSTRUCCIONES
- Poner el ajo en a mitad del aceite y dejar reposar 5 minutos
- Precalentar el horno normal o eléctrico a 180°
- Barnizar el hongo con el aceite y meter al horno por 7 minutos
- En un sartén poner el resto del aceite y saltear la cebolla por 5 minutos
- Agregar el pavo y cocinar hasta que esté dorado
- Agregar la espinaca y cocinar por 2 minutos
- Sazonar
- En un bowl pequeño combinar el aguacate y la mezcla de pavo
- Sazonar
- Pochar el huevo (Huevo pochado sobre pan tostado)
- Mientras el huevo se pocha, emplatar el portobello, rellenarlo con la mezcla de pavo
- Sacar el huevo, secarlo con toalla de papel y acomodar encima del portobello relleno
- Poner sal y pimienta
- Salsear con la salsa que más te guste

Stuffed portobello with poached egg
I’ve been wanting to make myself this breakfast for a week now, but time always gets to me with munchkin 1 at home. This Monday she went to sleep with her Abi and I had some time.
As I told you before in my poached egg over toast post, I love poached eggs and it was my culinary accomplishment two years ago. I love the texture and it goes really well in many things, because the creamy yolk can be a sauce for sandwiches, pastas, veggies and over toast.
Now, this past Monday I made roasted turkey breast with avocado and spinach for munchkin 2 and I had a lot left, so I used it to stuff my mushroom and put a green sauce over it.
The trick is to roast the mushroom for less than 10 minutes to make the flavor more intense and help the dish be tastier: you just need to brush your mushroom with avocado oil and garlic, put it in the oven and it will be ready.
What was left of the turkey mixture, I used in an open faced sandwich with organic toast for the little ones for dinner and they loved it.

Stuffed portobello with poached egg
INGREDIENTS
1 serving
1 big portobello mushroom
1 tablespoon avocado oil
1 garlic clove minces
1 egg
¼ cup Kirkland whole turkey breast chopped (no nitrates)
½ mashed avocado
¼ cup chopped spinach
3 tablespoons diced onion
INSTRUCTIONS
- Put the garlic in half the oil and let rest for 5 minutes
- Preheat your conventional or electric oven at 180°
- Brush the mushroom with the oil mixture and bake for 7 minutes
- In a pan add the rest of the oil and sauté the onion for 5 minutes
- Add the turkey and let brown
- Add the spinach and cook for 2 minutes
- Season
- In a small bowl mix avocado and turkey mixture
- Season
- Poach egg (Poached egg over toast)
- While the egg is poaching stuff mushroom with turkey mixture
- Take egg out and pat dry with paper towels, place it on top of the portobello and season with salt and pepper
- Put green sauce or whatever sauce you like on top
