Esta es la última receta de septiembre y la primera del otoño. Así que empezamos con mi pastel de cumpleaños y abrimos con manzanas.
Además, ya empezamos con los preparativos para los diferentes festejos de Halloween, y no sé en qué momento me empecé a emocionar con Halloween porque nunca me han gustado los eventos que involucran consumismo sin control como el día del niño, San Valentín, día de las madres, de los abuelos, navidad y Halloween, pero desde que tengo hijos Halloween se ha vuelto mi festejo favorito, porque es el más divertido de todos y no involucra cenas súper complicadas, hordas de gente haciendo colas en restaurantes o búsquedas de regalos para todo mundo.
El caso es que este año en particular, tengo muchas ganas de festejar Halloween y hacerlo en grande, así que otra vez estoy organizando el festejo de donde vivimos con los amiguitos de los chamacos y con la familia.
Esta es la receta del pastel que hice para mi cumpleaños, y ya me di cuenta de que algo tengo con las manzanas, pues las veces que me hago pasteles para mí siempre son de manzana; el año pasado me hice uno con relleno de pay de manzana, hace 2 fue con betún de maple y manzana y este año fue volteado de manzana con miel de maple infusionada con canela en raja.
La receta es bastante sencilla, y lo único que hay que cuidar es que el caramelo que se hace con la miel de maple no se endurezca y hay que vaciarlo inmediatamente en el molde y acomodar las rebanadas de manzana para que no se haga piedra (me pasó que, por andar de chismosa en el teléfono, el caramelo se endureció muchísimo y fue un relajo volverlo a hacer líquido). Y al momento de agregar la masa de pastel, pegarle al molde para que la masa se distribuya por las manzanas.
De ahí en fuera, es sólo mezclar, vaciar y hornear.

Pastel volteado de manzana con maple a la canela
INGREDIENTES
10 porciones
1 taza miel de maple
1 raja de canela
3 manzanas peladas, sin corazón y en rebanadas delgadas
130 gr mantequilla a temperatura ambiente
1 1/3 taza azúcar mascabado
2 tazas harina
1 cucharadita polvo para hornear
½ cucharadita bicarbonato de sodio
1 cucharadita de sal
3 huevos orgánicos
¾ taza de buttermilk (leche con 1 cucharadita vinagre blanco)
1 cucharada esencia de vainilla
INSTRUCCIONES
- Precalienta el horno a 180°C
- Engrasar un molde para pastel de 10 pulgadas de diámetro
- Calentar la miel de maple con la raja de canela y dejar cocinar hasta que se reduzca a la mitad
- Retirar la raja de canela y vaciar la miel en el molde engrasado
- Acomodar las rebanadas de manzana en círculos aunque se encimen
- Batir la mantequilla con el azúcar hasta que esté cremoso y esponjado
- Agregar los huevos uno a la vez
- Agregar la vainilla
- Mezclar la harina, sal, bicarbonato y polvo para hornear
- Agregar la mitad del buttermilk
- Agregar la mitad de los ingredientes secos
- Repetir
- Vaciar la mezcla en el molde sobre las manzanas
- Darle unos golpecitos al molde contra una superficie plana para esparcir la masa y tapar huecos entre las manzanas
- Hornear 1 hora o hasta que se vea dorado
- Sacar y dejar enfriar 10 minutos
- Voltear
- Servir

Upside down apple cake with cinnamon infused maple syrup
This is the last September recipe and the first of the autumn. So, we start with a birthday cake and with apples.
We have also started all the Halloween preparations for the many Halloween parties, and I have no idea when I started liking Halloween so much, since I am not a person who celebrates holidays that involve a lot of buying stuff like Children’s Day, Valentine’s, Mother’s Day, grandparent’s day, Christmas and Halloween, but since I had kids, Halloween has become my favorite celebration, because it is fun and it does not involve complicated dinners, queuing for hours to get into a restaurant or buying tons of presents.
The thing is that this year in particular, I feel like celebrating the hell out of Halloween, so here I am again organizing the trick or treating at the place I live and so far, I have a ton of family and my kid’ friends coming.
This is the recipe of the cake I made for my birthday, and I realized that I have a thing for apples, for every time I make a cake for myself it has to have apples; last year it was the apple cake with apple pie filling, and 2 years ago it was apple cake with maple frosting, and this year and upside down cake with cinnamon infused maple.
The recipe is pretty straightforward and the only thing to look out for is the caramel from the infused maple syrup since it can turn hard rock if you don’t pour it immediately into the pan with the apples (it happened to me, that while I was on the pone gossiping, it went super hard and it took a lot of work to get it liquid again). And when you add the cake mixture tap the pan a bit so it fills in all the spaces in between the apples.
Aside from that, it is just mixing, pouring and baking.

Upside down apple cake with cinnamon infused maple syrup
INGREDIENTS
10 servings
1 cup maple syrup
1 cinnamon stick
3 apples, peeled, cored and thinly sliced
2 cups flour
130 gr butter at room temperature
1 1/3 cup muscovado sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3 organic eggs
3/4 cup buttermilk (milk with 1 teaspoon white vinegar)
1 tablespoon vanilla essence
INSTRUCTIONS
- Preheat the oven to 180°C
- Grease a 10-inch cake pan
- Heat maple syrup with cinnamon stick and leave to cook until it reduces to half
- Remove the cinnamon stick and empty the syrup into the greased pan
- Arrange apple slices in circles overlapping a bit
- Beat the butter with the sugar until creamy and fluffy
- Add eggs one at a time
- Add vanilla
- Mix flour, salt, baking soda and baking powder
- Add half of buttermilk
- Add half of the dry ingredients
- Repeat
- Empty the mixture into the pan over the apples
- Tap the pan against a flat surface to spread the dough and cover spaces between the apples
- Bake 1 hour or until golden brown
- Take out of the oven and let cool for 10 minutes
- Flip
- Serve
