Apenas probé mi primer carajillo en octubre en una boda en Oaxaca. Desde entonces compré mi botella de licor del 43 y estuve haciendo pruebas para ver cómo me gustaba a mí. No soy fan del café espresso así que no me lo hago con espresso sino lungo de esos de maquinita y aunque tengo polvo para espresso, la verdad es que lo uso para mis postres y conseguirlo en México es súper complicado y caro, así que mi stash de polvo de espresso es intocable si no es para postres.
Lo interesante del que probé en Oaxaca a diferencia de los que yo había visto son las especias. En esas boda fácil me tomé unos 4; primero porque tenía sueño y la cafeína sí me hace efecto y dos porque era como un postre maravilloso con sabor a jengibre y un toque de naranja y canela, que casi no son de mis sabores favoritos y muy acordes a la época decembrina.
El chiste es poner la canela, jengibre y naranja en el café hirviendo y dejarlo reposar un poquito para que infusione. Si quieres hacer para mucha gente, mide dos tazas de café con el que hagas tu carajillo y agrega las especias hasta que se enfríe mientras comen para que cuando lleguen al digestivo ya esté infusionado y así ya nada más lo agregas al licor y el hielo.

INGREDIENTES
1 porción
100 ml licor del 43
150 ml de café lungo caliente
2 gramos de raja de canela
3 rodajas de jengibre
1 pedazo chico de cáscara de naranja
Hielo
INSTRUCCIONES
- En el café caliente agregar el jengibre, cáscara de naranja y canela. Dejar reposar 5 minutos
- En un vaso poner suficiente hielo, agregar el licor y el café caliente con las especias
- Mezclar bien y dejar reposar para que se enfríe

Spicy carajillo
I just had my first carajillo in October at a wedding in Oaxaca. Since then, I got my bottle of Licor 43 and I’ve been doing tests to see how I liked it. I’m not a fan of espresso, so I don’t do it with espresso but lungo from the machine and although I have espresso powder, the truth is that I use it for my desserts and finding it in Mexico is super complicated and expensive, so my espresso powder stash is untouchable and only for desserts.
The interesting thing I tried in Oaxaca unlike the ones I had seen are the spices. At the wedding I had 4 of those; firstly because I was sleepy and caffeine does work for me and two because it was like a wonderful dessert flavored with ginger and a touch of orange and cinnamon, which are some of my favorite flavors and very according to the December season.
The trick is to add the cinnamon, ginger and orange peel in the boiling coffee and let it rest a little to infuse. If you want to make these for many people, measure two cups of hot coffee with which you make your carajillo and add the spices until it cools while you guys eat so that when you get to the dessert part, the coffee is already infused and you just add it to the liquor and ice.

2 gr cinnamon sliver
3 thin slices ginger
1 small piece of orange peel

INSTRUCTIONS
- In the hot coffee add the ginger, orange peel and cinnamon. Let stand for 5 minutes
- In a glass put enough ice, add the liqueur and hot coffee with the spices
- Mix well and let stand to cool
