2023 is about to end and good riddance, this has been the weirdest year of my life and that is saying a lot considering we went through a global pandemic. So, I hope everyone has a safe end of 2023 and a wonderful 2024 full of health, family, friends, fun and work.
So far, our plans for the New Year´s Eve are decided: lunch with my family and dinner with my husband´s family. To be honest, I have always preferred to stay home with my kids and husband and do something low-key, fun, but my husband and I always clash about it because he wishes to have these great, big celebrations which are not really my thing. Especially because there is alcohol involved and I don´t like to be out late in Mexico City when alcohol is going to be a certain thing as well as night driving.
Anyhow, we´ll see how it goes and I will make the best of it.
We are going to order food with my family, and I have to make a pasta for dinner. I am inclining to make 2 pastas, one with poblano sauce and another with my newly found favorite sauce of the year which is my marinara, cream and chipotle sauce that I have been using very often this past 6 months.
This is my last recipe of the year, and I am closing with a wonderful, easy, and healthy-ish dessert, which is a great option for your New Year´s dinner table. I am so very close to posting my 1000 recipe and I am so excited that it will probably happen during the first quarter of the next year.
I made this recipe because very dear friends came to see us and I wanted something new and very special, and I think the goal was accomplished because they really liked it. I have a reel about to be ready, but my new computer is still downloading a bunch of stuff from my old computer, and it is taking days for it to do so, given the wonderful internet in our home, but I cannot wait any longer to post this recipe because it is a great option for Sunday. I promise that as soon as I get everything, there will be a reel. Anyhow, this recipe is so easy you will find the reel is just fun to watch and not really necessary.
This is hazelnut torte which has only 4 ingredients and 2 flavor enhancers and can be made in a food processor. It took me longer to take out the ingredients than making it. The idea was to make a dessert with no flour but that is so delicious and feels so indulgent that you would never guess it is so easy and not prohibitive.
Now, the garnishes are another story: I made a simple chocolate sauce and a delicious and easy coffee cream to go with it and served it with berries to break the richness of the chocolate, and it is an epic combination (as my kids would say). The nuttiness of the torte goes great with the smooth chocolaty sauce and the sweet coffee cream. But the torte by itself is also amazing and it can be personalized to include both garnishes or just one with or without the fruit.
I hope you give it a go because it is honestly a wonderful dessert.

Hazelnut and chocolate torte with chocolate sauce and coffee cream
INGREDIENTS
8 portions
300 gr whole hazelnuts (I had peeled hazellnuts but it works great also with the skins on)
3 tablespoons cocoa
150 gr brown sugar
125 gr egg whites
1 teaspoon vanilla paste
¼ teaspoon kosher salt
Chocolate sauce
¼ cup cream
¼ cup milk
200 gr dark chocolate (I used 54% from Callebaut)
1 teaspoon vanilla paste
Coffee cream
1/3 cup cream
3 tablespoons sugar
1 teaspoon vanilla paste
1 tablespoon coffee concentrate
INSTRUCTIONS
- Preheat oven to 180ºC
- Add hazelnuts, sugar, salt and cocoa to a food processor and pulse until everything is integrated and there are no large bits of hazelnuts
- Beat egg whites with a pinch of salt until you get stiff peaks
- Fold in dry ingredients into the egg whites slowly to avoid taking the air out of the egg whites
- Pour mixture into an 8 inch cake pan, previously greased
- Bake until a toothpick comes out clean (you can also tell when a cake is ready if the edges come off by themselves)
- While the cake is baking heat the cream and milk for the chocolate sauce
- Once it is hot add chocolate and vanilla and mix until you have a syrupy smooth sauce
- Beat the cream with the sugar for the coffee cream
- Once the sugar is dissolved add the vanilla and coffee concentrate and beat until fluffy
- Once the cake is ready, let cool for 10 minutes, take out of the pan and let cool completely
- Serve with the chocolate sauce, coffee cream and berries

Torta de avellanas y chocolate con salsa de chocolate y crema de café
2023 está a punto de terminar y qué bueno, este ha sido el año más extraño de mi vida y eso es mucho decir tomando en cuenta que pasamos por una pandemia global. Así que espero que todos tengan un final de 2023 seguro y un maravilloso 2024 lleno de salud, familia, amigos, diversión y trabajo.
Hasta ahora, nuestros planes para la víspera de Año Nuevo están decididos: comida con mi familia y cena con la familia de mi esposo. La neta, siempre he preferido quedarme en casa con mis hijos y mi esposo y hacer algo tranquilo y divertido, pero mi esposo y yo siempre chocamos porque él quiere tener estas grandes celebraciones que no son muy mi onda. Sobre todo porque hay alcohol de por medio y no me gusta salir hasta tarde en la Ciudad de México cuando el alcohol va a ser una cosa segura, ni manejar de noche desde Santa Fe hasta mi casa.
Igual, veremos cómo sale y lo aprovecharé al máximo.
Vamos a pedir comida con mi familia y tengo que hacer una pasta para la cena. Me estoy decidiendo a hacer 2 pastas, una con salsa poblana y otra con mi salsa favorita del año, que es mi salsa marinara, crema y chipotle que he estado usando requete seguido en estos últimos 6 meses.
Ésta es mi última receta del año, y cierro con un postre maravilloso, fácil y casi sano, que es una excelente opción para tu mesa de Año Nuevo. Estoy muy cerca de publicar mi receta número 1000 y estoy muy emocionada de que probablemente suceda durante el primer trimestre del próximo año.
La idea de esta receta era apapachar a unos amigos muy queridos que vinieron a vernos y ameritaba algo nuevo y muy especial. Creo que el objetivo se logró porque les gustó mucho. Tengo un reel por postear con la receta, pero mi nueva computadora sigue sincronizando un montón de archivos y le está tomando una vida con el súper internet que tenemos en la casa. Pero esta receta
Esta es una tarta de avellanas que tiene solo 4 ingredientes y 2 sabores y se puede hacer en un food processor. Me tomó más tiempo sacar los ingredientes que hacer la torta. La idea era hacer un postre sin harina, pero que sea tan delicioso y se sienta tan indulgente que nunca adivinarías que es tan fácil y no prohibitivo.
Ahora, las salsas son otra historia: hice una salsa de chocolate simple y una crema de café deliciosa y fácil para acompañar y la serví con frutos rojos para romper la riqueza del chocolate, y es una combinación épica (como dirían mis hijos). El sabor a avellana de la tarta combina muy bien con la suave salsa de chocolate y la crema de café dulce. Pero la tarta por sí sola también es increíble y se puede personalizar para incluir ambas salsas o solo una con o sin la fruta.
Espero que lo prueben porque honestamente es un postre maravilloso.

Tarta de avellanas y chocolate con salsa de chocolate y crema de café
INGREDIENTES
8 porciones
300 gr de avellanas enteras (yo tenía avellanas peladas pero funciona muy bien también con la piel)
3 cucharadas de cocoa
150 gr de azúcar moreno
125 gr de claras de huevo
1 cucharadita de pasta de vainilla
1/4 cucharadita de sal kosher
Salsa de chocolate
1/4 taza de crema
1/4 taza de leche
200 gr de chocolate oscuro (yo usé 54% de Callebaut)
1 cucharadita de pasta de vainilla
Crema de café
1/3 taza de crema
3 cucharadas de azúcar
1 cucharadita de pasta de vainilla
1 cucharada de concentrado de café
INSTRUCCIONES
- Precalentar el horno a 180ºC
- Agregar las avellanas, el azúcar, la sal y la cocoa a un food processor y pulsar hasta que todo esté integrado y no queden trozos grandes de avellanas
- Batir las claras de huevo con una pizca de sal hasta obtener picos firmes
- Incorporar los ingredientes secos a las claras de huevo lentamente para evitar quitar el aire de las claras de huevo
- Vaciar la mezcla en un molde para pasteles de 8 pulgadas, previamente engrasado
- Hornear hasta que un palillo salga limpio (también puede saber cuándo un pastel está listo si las orillas se desprenden solas)
- Mientras se hornea el pastel, calentar la crema y la leche para la salsa de chocolate
- Una vez que esté caliente, agregar el chocolate y la vainilla y mezcle hasta obtener una salsa suave y con consistencia de jarabe
- Batir la crema con el azúcar para la crema de café
- Una vez que el azúcar esté disuelto, agregar la vainilla y el concentrado de café y batir hasta que quede esponjoso
- Una vez que el pastel esté listo, deja enfriar por 10 minutos, sacar del molde y dejar enfriar por completo
- Servir con la salsa de chocolate, la crema de café y los frutos rojos
