I have been on keto for 3 weeks, now and I am 15 pounds lighter. I still have a bunch of weight to shed, but one week at a time.
So far, so good. Tons of water and loads of veggies and protein. My kids have been so happy with the proteins, because I have been rotating them a lot between shrimp, fish, beef, chicken, pork and tofu (which stayed just for me 😊)
I used the bone-in chops with no sauce because keto. I cannot eat a lot of fat, so I avoid dairy and cheese (oh cheese! I miss you) so I used a dry rub made with guajillo chili powder as the base with other spices. I roasted them in very high temperature for a few minutes to sear it and then I lowered the temp and cooked them with a bit of butter on top.
I did not pan sear them, so it was all a job for the oven.
The idea is to keep my cooking fuss free. I have to cook a lot of veggies on top of things for the kiddos, so my prep time is quite longer, so the actual cooking has suffered from a few short cuts, and the oven is a great way to not having to clean the stove all the time, having more space for the veggies and soups and sides on the stove and to not having to be there all the time.
So, love your oven.
These were a success, my daughter is still in love with red meat, and although I keep an eye on what I cook to not eat a lot of meat and have a balanced diet, she always loves meat days. They loved the rub and at first, they were a bit doubtful of the guajillo powder, but loved it and were super surprised it was not spicy.
The guajillo powder came from a latin market and it was a tip a guy who sells tacos de canasta in Mexico gave me when we were exchanging ideas for how to make these kind of tacos here in Canada (coming soon), and he was kind enough to give me his recipe and it included powder guajillo and not the actual pepper because he told me it took an eternity to rehydrate, seed, chop, blend and make the marinade.
But today, is order in or go out to eat Friday, so no cooking today, we are having Italian, the works, pizza, pasta and polenta fries for the kids and salmon with salad for me. Mom needs to rest. Long week, long, long week.

Roasted bone-in pork chops

INGREDIENTES
4 portions
4 bone-in pork chops of about half an inch thick
2 tablespoons guajillo chili powder
2 tablespoons sea salt
1 tablespoon paprika
1 tablespoon ground black pepper
½ tablespoon garlic powder
¼ cup avocado oil
4 5 gr butter pats
INSTRUCTIONS
- Mix all spices in a bowl
- Pat dry the pork chops
- Preheat the oven at 425ºC.
- Place an oven safe tray with a silicon mat
- Sprinkle half the rub mixture on the tray
- Place the chops on top of the rub and sprinkle the rest of the rub mixture on top and cover completely
- Pour one tablespoon of oil on top of each pork chop and rub
- Roast for 5 minutes
- Turn pork chops and roast on other side for 5 minutes
- Lower temperature at 375ºC
- Take out chops and place on pat of butter on top of each pork chop
- Return to oven and cook for 10 to 15 minutes until inside temperature of the chops is 74ºC
- Take out and let rest for 5 minutes
- Serve with potatoes, rice and/or salad

Chuletas de cerdo con hueso asadas
He estado en keto durante 3 semanas, ahora y peso casi 8 kilos menos. Todavía tengo un montón de peso que perder, pero una semana a la vez.
Hasta ahora, bien. Toneladas de agua y un montón de verduras y proteínas. Mis hijos han estado muy contentos con las proteínas, porque los he estado rotando mucho entre camarones, pescado, carne de res, pollo, cerdo y tofu (que se quedó solo para mí 😊)
Cociné las chuletas con hueso sin salsa porque keto. No puedo comer mucha grasa, así que evito los lácteos y el queso (¡ay queso! Te extraño) así que usé un rub seco hecho con chile guajillo en polvo como base con otras especias. Los asé a temperatura muy alta durante unos minutos para dorarlas y luego bajé la temperatura y los cociné con un poco de mantequilla encima.
No los selle o cociné en sartén, así que todo fue un trabajo para el horno.
La idea es mantener mi cocina libre de complicaciones. Tengo que cocinar muchas verduras además de las cosas para los niños, por lo que mi tiempo de preparación es bastante más largo, así que la cocinada en si ha tenido algunos atajos, y el horno es una excelente manera de no tener que limpiar la estufa todo el tiempo, tener más espacio para las verduras, sopas y acompañamientos en la estufa y no tener que estar allí todo el tiempo.
Así que, ama tu horno.
Estas chuletas fueron un éxito, mi hija sigue enamorada de la carne roja, y aunque vigilo lo que cocino para no comer mucha carne y tener una dieta equilibrada, a ella siempre le encantan los días de carne. Les encantó el rub y, al principio, dudaron un poco del guajillo en polvo, pero les encantó y se sorprendieron mucho de que no fuera picante.
El guajillo en polvo vino de un mercado latino y fue un consejo que me dio un señor que vende tacos de canasta en México cuando estábamos intercambiando ideas sobre cómo hacer este tipo de tacos aquí en Canadá (próximamente), y tuvo la amabilidad de darme su receta e incluía guajillo en polvo y no el chile completo porque me dijo que tardaba una eternidad en rehidratarse, quitar las semillas, picar, licuar y hacer la marinada.
Pero hoy, es el viernes de pedir o salir a comer, así que no hay cocina hoy. Vamos a comer italiano, todo incluído, pizza, pasta y palitos de polenta para los niños y salmón con ensalada para mí. Mamá necesita descansar. Semana larga, larga, muy larga.

Chuletas de cerdo con hueso asadas
INGREDIENTES
4 porciones
4 chuletas de cerdo con hueso de aproximadamente media pulgada de grosor
2 cucharadas de chile guajillo en polvo
2 cucharadas de sal de mar
1 cucharada de paprika
1 cucharada de pimienta negra molida
1/2 cucharada de ajo en polvo
1/4 taza de aceite de aguacate
4 5 gr de cubitos de mantequilla
INSTRUCCIONES
- Mezclar todas las especias en un bowl
- Secar las chuletas de cerdo con toallas de papel
- Precalentar el horno a 425ºC.
- Colocar una charola para horno con un tapete de silicón
- Espolvoree la mitad de la mezcla para frotar en la bandeja
- Colocar las chuletas encima de la mezcla de especias y espolvorear el resto de la mezcla para frotar encima y cubrir por completo
- Poner una cucharada de aceite encima de cada chuleta de cerdo y cubrir
- Sellar durante 5 minutos en el horno
- Voltear las chuletas de cerdo y ase por el otro lado durante 5 minutos
- Bajar la temperatura a 375ºC
- Sacar las chuletas y acomodar un cubito de mantequilla sobre cada una
- Regresar al horno y cocinar durante 10 a 15 minutos hasta que la temperatura interior de las chuletas sea de 74ºC
- Sacar y dejar reposar durante 5 minutos
- Servir con papas, arroz y/o ensalada
