What a week! For what seems to be another one of those years and it is not even the end of January…what happened to the world after the pandemic? Is it set on making our lives really hard just for the fun of it?

I hope you are all doing well, and happy and healthy.

My kid has decided to organize a cupcake fest with her friends. They plan to invite a bunch of people to sell cupcakes and have a winner in different categories. The fun part is that they will not participate as contestants, but they want to be the organizers and staff (I am not allowed to participate) and I would, if the plan continues, to help them organize and to sell puppy treats and beverages as part of the benefits of the festival.

That is what their dad does at his job, but we don’t know if he will have the time or budget to help, so we are thinking of ways to make it happen.

I am very excited to follow through because it was their initiative and I believe it would be a wonderful experience in so many ways.

I must say that my daughter has always shown a very innate ability to sell, which I assure you it has taken us, the parents, a long time to learn and master. And it is such an important skill to have in so many aspects of life, so encouraging her to do this things is very important to me.

First bread recipe of the year. I realized I haven´t baked that much bread in the past year, at least not new recipes. I hope I will make that change this year. I just haven´t been in my bread groove lately, if lately can be considered a whole year.

I will be on keto for a while here, and it is going great. But the kiddos are not on keto, nor they should be, so they eat bread and pasta and cookies and sugar, and I still prefer to bake and cook their food if I can and avoid store bought things. There are great bakeries here, but not near my home, so I get it as much as I can when we go near them.

I have used tons of sourdough discard though, because making waffles, pancakes, crepes and these crumpets is a breeze in general, and sourdough adds the extra nutrition and benefits that bread lacks most of the time.

My sourdough turns 3 years old in a few weeks, and it is the gift that keeps on giving. I am starting a new sourdough that is keto friendly made with coconut flour, but it will take time, and being very honest I have no idea if it will work, but why not experiment?

I have a regular crumpet recipe on the blog, and for those of you who don’t know what these are, I would describe them as a mixture between an english muffin and a fluffy pancake.

These are amazing with jams and sweet spreads, for lunch and breakfast. My kids have even eaten them with red pesto, chicken, and cheese.

Sourdough crumpets

INGREDIENTS

6 crumpets

300 gr sourdough discard

120 gr flour

100 gr water

45 gr sugar

5 gr baking soda

4 gr salt

 

INSTRUCTIONS

  1. Mix all the ingredients and whisk together until integrated
  2. Cover and let rest for 30 minutes
  3. Heat a gridle and grease ring for crumpets
  4. Add ¼ cup mixture into each ring and let cook on low heat until you see very firm holes
  5. Remove from ring, flip and let cook fully
  6. Let cool in a cooling grid
  7. Serve with jams, or sweet spreads and fruit
  8. Keep in an airtight container for up to 5 days

¡Qué semana! Para lo que parece ser otro de esos años y ni siquiera ha terminado enero… ¿Qué pasó con el mundo después de la pandemia? ¿Está decidido a hacernos la vida súper difícil solo por diversión?

Espero que todos estén bien, felices y sanos.

Mi hija ha decidido organizar un festival de cupcakes con sus amigas. Planean invitar a un grupo de personas a vender cupcakes y tener un ganador en diferentes categorías. La parte divertida es que no participarán como concursantes, sino que quieren ser las organizadoras y el staff (no se me permite participar) y yo, si el plan continúa, les ayudaría a organizar y vender snacks para perros y bebidas como parte de los atractivos del festival.

Eso es lo que hace su papá en su trabajo, pero no sabemos si tendrá el tiempo o el presupuesto para ayudar, así que estamos pensando en formas de hacerlo realidad.

Estoy muy emocionada de motivarla a que lo hagan porque fue su iniciativa y creo que sería una experiencia maravillosa en muchos sentidos.

Debo decir que mi hija siempre ha demostrado una capacidad innata de venta, que les aseguro que nos ha llevado mucho tiempo a nosotros, los padres, aprender y dominar. Y es una habilidad muy importante para tener en muchos aspectos de la vida, así que motivarla a hacer estas cosas es muy importante para mí.

Primera receta de pan del año. Me di cuenta de que no había horneado tanto pan en el último año, al menos no nuevas recetas. Espero cambiarlo este año. Simplemente no he estado en mi ritmo de pan últimamente, si últimamente se puede considerar un año entero.

Estaré en keto por un tiempo aquí, y va muy bien. Pero los niños no están en keto, ni deberían estarlo, por lo que comen pan, pasta, galletas y azúcar, y todavía prefiero hornear y cocinar su comida si puedo y evitar las cosas listas para comer. Hay muchas panaderías maravillosas aquí, pero no cerca de mi casa, así que consigo todo lo que puedo cuando estamos cerca de alguna.

Pero, he usado toneladas de lo que queda de masa madre cuando la alimento, porque hacer waffles, hotcakes, crepas y estos crumpets es muy fácil en general, y la masa madre agrega la nutrición y los beneficios adicionales de los que carece el pan la mayor parte del tiempo.

Mi masa madre cumple 3 años en unas semanas, y es el regalo que sigue dando. Estoy empezando a hacer una nueva masa madre que es cetogénica hecha con harina de coco, pero tomará tiempo y, siendo muy honesta, no tengo idea de si funcionará, pero ¿por qué no experimentar?

Tengo una receta regular de crumpets en el blog, y para aquellos de ustedes que no saben qué son, los describiría como una mezcla entre un muffin inglés y un hotcake esponjoso.

Estos son increíbles con mermeladas y embarres para untar, para el lunch y el desayuno. Mis hijos hasta los han comido con pesto rojo, pollo y queso.

Crumpets de masa madre

INGREDIENTES

6 crumpets

300 gr de lo que sobra de masa madre cuando la alimentas

120 gr de harina

100 gr de agua

45 gr de azúcar

5 gr de bicarbonato de sodio

4 gr de sal

 

INSTRUCCIONES

  1. Mezclar todos los ingredientes y mezcle hasta que se integren
  2. Tapar y dejar reposar durante 30 minutos
  3. Calentar una parrilla y engrasar un anillo para bollos
  4. Agregar 1/4 de taza de la mezcla en cada anillo y deje cocinar a fuego lento hasta que vea agujeros muy firmes
  5. Retirar del aro, voltear y dejar cocinar por completo
  6. Dejar enfriar en una rejilla de enfriamiento
  7. Servir con mermeladas o embarres para untar y fruta
  8. Mantener en un recipiente hermético hasta por 5 días
