Ya estoy de regreso de mis vacaciones y emocionada por ver a mis enanos, que por cierto no nos extrañaron un solo segundo: no nos llamaron, video chatearon o mandaron un solo mensaje en 10 días, lo que quiere decir que estaban felices bien cuidados…pero NI UN intento de contacto de su parte. También ya estamos a 6 días de regresar a la rutina y preparar todo para el regreso a clases. Ya la próxima semana todos los enanos regresan a la escuela y la vida regresa a su rutina normal.
El viaje estuvo increíble y ahora vimos ciudades y países en los que nunca habíamos estado, así que vimos muchísimas cosas nuevas y, por supuesto, probamos muchas cosas nuevas. Estuvimos en Holanda, Reino Unido y Bélgica, y como siempre, probamos lo más que pudimos de comida local: mi esposo enfocado a lo dulce y yo a especies y platos tradicionales.
En Londres fuimos a restaurantes de Yotam Ottolenghi (casual) y Gordon Ramsey (formal) y no tienen idea la comida en los dos. Ottolenghi se enfoca a comida mediterránea en su mayoría vegetariana y súper sana (no lo favorito de mi esposo y sintió que fue engañado vilmente para ir a comer ahí…Se le olvidó momentáneamente su intención de comer mejor gracias a Arnold Schwarzenegger). Ramsey ya tiene como mil restaurantes por todo Londres, pero por ser cumpleaños de mi esposo escogió uno de fine dining y la experiencia valió toda la pena.
Ya les había contado sobre estas bolitas de sushi que mis hijos amaron. Lo único que hay que hacer es el arroz de sushi y ponerle pescados o verduras y apretarlas con plástico para formar las bolitas para que se aprieten y mantengan la forma, y ya que las sirves les pones los toppings que quieras. Esta vez usé salmón y totoaba grado sashimi, hojas shiso, hueva de salmón, aguacate, furikake orgánico, cebollín, pero hay mil opciones. Puedes usar camarón, pepino, atún o cualquier cosa que te guste en tu sushi.
Las puedes hacer unas 2 horas antes de servirlas y meterlas al refri para que se mantenga la forma y ya al servir le pones los toppings.

Bolitas de sushi integral
INGREDIENTES
4 porciones
1 ½ taza arroz para sushi integral
¼ taza mirrin
1 cucharada sal
1 cucharada azúcar
Pescados crudos grado sashimi (yo usé salmón y totoaba de Ingredienta)
Hojas shiso picada finamente al gusto
Aguacate
Alga para sushi picada muy finito al gusto
Furikake orgánico al gusto
Aguacate en láminas muy finitas
Hueva de salmón
Cebollín picado para servir
Hojas shiso para servir
Salsa tamari para servir
Cuadros de plástico para comida para hacer las bolitas
INSTRUCCIONES
- Cocer el arroz de acuerdo a las instrucciones
- Calentar el mirrin con el azúcar y sal para pulir el arroz
- Pulir el arroz de sushi (con una pala de madera mezclar el arroz con la mezcla de mirrin mientras alguien te ayuda a abanicarlo para irlo enfriando, lo tapas con toalla de tela hasta que lo uses)
- Dividir el arroz en 3 bowls
- En un bowl, mezclar el arroz con el alga picada súper finito, en otro bowl mezclar con el furikake y en otro bowl mezclar con las hojas shiso picadas
- Con una cuchara para helado o cuchara normal, hacer una bola de arroz (mojarse las manos con agua para poder manipular el arroz sin que se pegue)
- Colocar la bolita sobre un cacho de plástico para comida y poner encima el pescado, aguacate, hojas shiso, o lo que se te antoje
- Cerrar el plástico y torcer la parte de arriba mientras se forma la bolita. Apretar para que la bolita quede bien formada
- Dejar cerrado por 20 minutos
- Desenvolver las bolitas y acomodar en un platón
- Servir con diferentes toppings como hueva de salmón, aguacate, hoja shiso, furikake, pepino, rábano o lo que más te guste
- Servir con salsa tamari

Brown rice sushi bites
I am back from our vacations and excited to see my kids, whom did not miss us for even a bloody second, not one call, video call or message, which, of course means they were happy and entertained, but not ONE! attempt to contact their parents 😊. We are also six days away from going back to school and we are getting ready. Welcome everyday routine.
The trip was amazing, and we went to cities and countries we had never been to before, so we saw a lot of new things and, of course, tasted a lot of new food. We went to the Netherlands, United Kingdom and Belgium and we tried as much local food as we could: my husband focused on the sweet stuff and me on the spices and traditional dishes.
In London we went to Yotam Ottolenghi (casual) and Gordon Ramsey (formal) restaurants and you cannot imagine how wonderful they both were. Ottolenghi is all about Mediterranean and mostly vegetarian and super healthy food (not my husband’s choice and he felt he was tricked into going…he momentarily forgot about his attempts to eat healthier thanks to Arnold Schwarzenegger). Ramsey has many restaurants throughout London, but he chose a fine dining one for his 40th and the experience was oh, so worth it!
I told you before about these sushi balls that my kids absolutely adored. The only thing you need to do is make the sushi rice and top with fish and veggies and shape them with plastic wrap ad before serving you top with whatever you like best. This time I used sushi grade totoaba and salmon, shisho leaves, salmon roe, avocados, organic furikake, and chives, but there are endless options. You can use shrimp, cucumber, tuna or anything you like in your sushi.
You can make these 2 hours in advance before serving them and refrigerate to hold the shape and put the toppings just before serving.

Brown rice sushi bites
INGREDIENTS
4 servings
1 1/2 cups brown sushi rice
1/4 cup mirrin
1 tablespoon salt
1 tablespoon sugar
Sashimi grade raw fish (I used salmon and totoaba)
Finely chopped shiso leaves to taste
Avocado finely sliced
Very finely chopped sushi seaweed to taste
Organic Furikake to taste
Avocado in very finite slices
Salmon roe
Chopped chives to serve
Shiso leaves to serve
Tamari sauce to serve
Plastic tables for food to make the balls
INSTRUCTIONS
- Cook the rice according to the instructions
- Heat the mirrin with the sugar and salt until dissolved to polish the rice
- Polish the sushi rice (with a wooden spoon mix the rice with the mirrin mixture while someone helps you fan it to cool it, you cover it with a cloth towel until you use it)
- Divide the rice into 3 bowls
- In one bowl, mix the rice with the super finite chopped seaweed, in another bowl mix with the furikake and in another bowl mix with the chopped shiso leaves
- Using an ice cream spoon or regular spoon, make a rice ball (wet your hands with water so you can handle the rice without sticking)
- Place the ball on plastic wrap and place the fish, avocado, shiso leaves, or whatever you want on top of
- Close the plastic and twist the top while the ball is formed. Squeeze to make the ball tight
- Tight the plastic wrap and let rest for 20 minutes
- Unwrap the balls and place on a plate
- Serve with different toppings such as salmon roe, avocado, shiso leaf, furikake, cucumber, radish or whatever you like
- Serve con tamari sauce
