I am in Mexico. We did it after a very long travel day and Dona Jingles arrives fine, and only a bit out of sorts. But she is now back to her usual self.
We have been getting settled and visiting family and friends and now we are starting to get more relaxed.
We have had Mexican food, great tortillas, tortas, homemade stuff that we hadn’t had in months and so on.
Today I am taking a day off to rest and cook. I have made ponche and a few other things here and there like 7 tangerine poundcakes, crepes, and sauces for different breakfasts. In Mexico we like our eggs with different sauces which is what, I think, makes our breakfasts so different to simple omelettes or eggs, as well as chilaquiles, enchiladas and so on.
We are planning the menu for Christmas, and we can decide. In part because I don’t want to cook for many people, and secondly because we cannot agree on a menu. I have two 5 kilos turkeys in my fridge, but my mom and I like our turkeys in very different ways, I am also thinking of a prime rib which is fairly simple, but my mom wants Beef Wellington which is not simple. And also, there are my niece and nephew who are not great eaters, so there has to be a simple pasta. So, we need to have a few more days to get organized before the big dinner.
The reel for this recipe is not very detailed because my phone decided to not work well and I didn’t realize it had stopped filming on several stages of the recipe.
This is a recipe that I consider could make it to the Christmas table if you are not married to the same dinner every year, like my parents are. I am the rebel daughter that keeps adding different things every year since I am not a fan of a few family Christmas dinner staples.
This is a recipe from Jamie Oliver that I adapted. It is a thick bechamel with fish and shrimp, but I changed the kind of fish to sole, and added veggies to the roux which is always a great way to add flavor and depth to any recipe. I added the basic onion, celery, garlic and carrot and added leeks because I love them.
I started the roux after I cooked the shrimp, so that the bits that stick to the bottom gave more flavor and color to the thick bechamel and added more sharp cheddar cheese.
Also, the sole is poached in milk with bay leaves, and I added a few spices and garlic to infuse the milk that then turns into the bechamel. Honestly, I have to say that the bechamel alone is worthy of a pasta or lasagna. It is one of the best sauces I have ever made, delicious, with different textures and thick.
Once you add the poached sole and the shrimp it is absolutely wonderful.
Then there is the mashed potatoes mashed with the peas which gives it a different flavor and it goes wonderfully with the sole and shrimp filling. As a result you get a wonderful recipe in a very original way and the family was delighted.
Now, do not skip the mustard powder which is a wonderful spice and the veggies are a must for the flavor and texture.

Fish, shrimp and potato pie
INGREDIENTS
6 portions
Mashed potatoes
1 kg potatoes, peeled and diced
400 gr frozen peas thawed
¼ cup skim milk
2 tablespoons ghee
Zest of one lemon
Salt, white pepper and paprika to taste
Filling
400 gr sole filets
300 gr peeled shrimp and cut into bite size pieces (keep the shells for broth or soups)
1 cup finely chopped onion
½ cup finely chopped leeks
1 cup finely chopped carrots
½ cup finely chopped celery
2 garlic cloves minced
1 bay leave
1 tablespoon mustard powder
Juice of 1 lemon
2 cups skim milk
50 gr sharp cheddar cheese cubed or shredded
3 tablespoons flour
Salt, white pepper and paprika to taste
INSTRUCTIONS
Mashed potatoes
- Boil potatoes in salted water
- Once they are soft, drain the water, and let them dry in the pot
- Process peas until you get a smooth paste
- Mash potatoes with pea paste, ghee, milk and season with salt, paprika, lemon zest and white pepper
- Reserve
Filling
- Heat the milk with the garlic, bay leaf and season with salt and white pepper
- Add the fish fillets and poach until cooked
- Take our carefully and put in a sieve to take out extra moisture
- Reserve milk for sauce
- In a thick bottom pan heat avocado oil and fry shrimp until pink
- Season with salt and pepper and reserve
- On the same pan, heat the oil and fry the onion and leeks moving constantly to unstick the bits of shrimp on the bottom (these are very tasteful)
- Add celery and carrots and keep moving until soft
- Add flour and mix well until it integrates
- Add milk passing it through a sieve t take out pieces of garlic
- Whisk until everything is integrates
- Add mustard powder, and season with salt, white pepper and paprika to taste
- Cook moving constantly until it thickens
- Add lemon juice
- Add shrimp and flakes of fish
- Taste and adjust all seasonings
- Preheat the oven to 200°C
- In an oven proof dish, pour filling and cover with the mashed potatoes
- Bake until hot and mash is golden brown
- Let rest for 10 minutes
- Serve

Pay de pescado, camarones y puré de papa
Estamos en México. Lo logramos después de un día de viaje muy largo y Dona Jingles llegó bien, y solo un poco desorientada. Pero ya está como si nada y encontrando sus rincones en la casa.
Nos hemos ido acomodando y visitando a familiares y amigos y ahora estamos empezando a relajarnos más.
Hemos comido muchas cosas mexicanas, excelentes tortillas, tortas, cosas caseras que no habíamos comido en meses, etc.
Hoy me tomé un día libre para descansar y cocinar. He hecho ponche y algunas otras cosas aquí y allá como 7 panqués de mandarina, crepas y salsas para diferentes desayunos. En México nos gustan nuestros huevos con diferentes salsas que es lo que, creo, hace que nuestros desayunos sean tan diferentes a los simples omelettes o a los huevos, así como a los chilaquiles, enchiladas y demás.
Estamos planeando el menú para Navidad, y no nos hemos puesto de acuerdo. En parte porque no quiero cocinar para mucha gente y, en segundo lugar, porque no podemos ponernos de acuerdo en un menú. Tengo dos pavos de 5 kilos en mi conge, pero a mi mamá y a mí nos gustan nuestros pavos de maneras muy diferentes, también estoy pensando en un prime rib que es bastante simple, pero mi mamá quiere Beef Wellington que no es simple. Y además, están mis sobrinos que no son grandes comedores, así que tiene que haber una pasta simple. Por lo tanto, necesitamos tener más pláticas para organizarnos antes de la gran cena.
Esta es una receta que considero que podría llegar a la mesa navideña si no estás casado con la misma cena todos los años, como mis papás. Soy la hija rebelde que sigue agregando cosas diferentes cada año porque no soy fan de algunos platillos clásicos para la cena familiar de Navidad.
El reel de esta receta está incompleto porque por alguna razón mi teléfono decidió no funcionar bien y ni cuenta me di cuando dejaba de grabar.
Esta es una receta de Jamie Oliver que adapté a mis gustos. Es una bechamel densa con pescado y camarones, pero cambié el tipo de pescado a lenguado y agregué verduras al roux, que siempre es una excelente manera de agregar sabor y profundidad a cualquier receta. Agregué los básicos de cebolla, apio, ajo y la zanahoria y agregué poros porque me encantan.
El roux lo hice con base de camarón, para que los trozos que se pegan al fondo le dieran más sabor y color a la bechamel espesa y agregué más queso cheddar fuerte.
Además, el lenguado se pocha en leche con hojas de laurel, y agregué algunas especias y ajo para infusionar la leche que luego se convierte en la bechamel. Sinceramente, tengo que decir que la bechamel por sí sola es digna de una pasta o lasaña. Es una de las mejores salsas que he hecho, deliciosa, con diferentes texturas y espesa.
Una vez que agregas el lenguado pochado y los camarones, es absolutamente maravilloso.
Luego está el puré de papa machacado con los chícharos que le da un sabor diferente y va de maravilla con el relleno de lenguado y camarones. Como resultado, es una receta maravillosa de una manera muy original y la familia quedó encantada.
Ahora, no se pueden quitar el polvo de mostaza, que es una especia maravillosa y las verduras son básicas por el sabor y la textura.

Pastel de pescado, camarones y puré de papa
INGREDIENTES
6 porciones
Puré de papa
1 kg de papas, peladas y cortadas en cubitos
400 gr de chícharos congelados
1/4 taza de leche baja en grasa
2 cucharadas de ghee
Ralladura de un limón
Sal, pimienta blanca y pimentón al gusto
Relleno
400 gr de filetes de lenguado
300 gr de camarones pelados y cortados en trozos pequeños (guardé las cáscaras para caldos o sopas)
1 taza de cebolla finamente picada
1/2 taza de poros finamente picados
1 taza de zanahorias finamente picadas
1/2 taza de apio finamente picado
2 dientes de ajo picados
1 hoja de laurel
1 cucharada de mostaza en polvo
Zumo de 1 limón
2 tazas de leche baja en grasa
50 gr de queso cheddar fuerte cortado en cubos o rallado
3 cucharadas de harina
Sal, pimienta blanca y pimentón al gusto
INSTRUCCIONES
Puré de papa
- Hervir las papas en agua con sal
- Una vez que estén blandas, escurrir el agua y dejarlas secar en la olla
- Moler los chícharos hasta obtener una pasta suave
- Aplastar las papas con los chícharos, ghee, leche y sazonar con sal, pimentón, ralladura de limón y pimienta blanca
- Reservar
Relleno
- Calentar la leche con el ajo, el laurel y sazonar con sal y pimienta blanca
- Agregar los filetes de pescado y pochar hasta que estén cocidos
- tener cuidado y ponerlo en un colador para eliminar el exceso de líquido
- Reservar la leche para la salsa
- En una sartén de fondo grueso, calentar el aceite de aguacate y freír los camarones hasta que estén rosados
- Sazonar con sal y pimienta y reservar
- En el mismo sartén, calentar el aceite y saltear la cebolla y los poros moviendo constantemente para despegar los trozos de camarones del fondo (agregar mucho sabor)
- Agregar el apio y las zanahorias y seguir moviendo hasta que estén suaves
- Agregar la harina y mezclar bien hasta que se integre
- Agregar la leche pasándola por un colador y sacar trozos de ajo
- Batir hasta que todo esté integrado
- Agrega mostaza en polvo y sazonar con sal, pimienta blanca y pimentón al gusto
- Cocinar moviendo constantemente hasta que espese
- Agregar jugo de limón
- Agregar los camarones y las hojuelas de pescado
- Probar y ajustar todos los condimentos
- Precalentar el horno a 200°C
- En un refractario para horno, vaciar el relleno y cubrir con el puré de papas
- Hornear hasta que esté caliente y el puré esté dorado
- Dejar reposar durante 10 minutos
- Servir
