Ésta es la última receta previa a Navidad y espero que les sirva para postre más sano. Como siempre les he contado, la gelatina es mi némesis y me tomó 4 intentos para que esta gelatina quedara lista para que les gustara a mi familia; la primera vez no colé la fruta y les gustó la textura, en la segunda le puse menos fruta y no sabía tanto a frutos rojos y era más el sabor a coco, en el tercer intento usé por primera vez azúcar de fruto de monje y no le puse suficiente así que sabía insípida y súper ácida por las frambuesas y ya en esta cuarta por fin quedó.
La idea inicial era hacer la gelatina de mamey que mi papá ama, pero compré tres veces, sí, tres veces mamey y las tres veces estaban podridos, así que cambié a frutos rojos.
Pueden usar la combinación de frutos rojos que quieran, siempre y cuando respeten los 700 gr en total. Puede ser con cerezas, con zarzamoras, fresas o con lo que más les guste que fue como se dio en los varios intentos, dependiendo qué tenía en mi casa era la combinación que usaba.

Gelatina de frutos rojos
INGREDIENTES
12 porciones
500 gr mora azul frescas
200 gr frambuesas frescas
1 lata de crema de coco (yo uso Thai Heritage)
1 ½ taza agua
½ taza de azúcar de fruto de monje o de azúcar estándar
35 gr de grenetina
2 cucharadas agua
1 pizca de sal de mar
INSTRUCCIONES
- Licuar las moras y frambuesas con el agua, sal, azúcar y crema de coco
- Colar y regresar a la licuadora
- Hidratar la grenetina con 2 cucharadas de agua
- Dejar esponjar. Ya que esponje derretir en el microondas teniendo cuidado de no quemarla
- Agregar la grenetina a la licuadora y licuar hasta que todo se integre
- Vaciar en un molde y refrigerar hasta que esté firme
- Servir

This is the last recipe before Christmas, and I hope it will be useful for a healthier dessert. As I have always told you, gelatin is my nemesis and it took me 4 attempts to get this jelly ready for my family to like; the first time I didn’t sieve the fruit and they hated the texture, the second time I added less fruit and it didn’t have a berry taste and it was more the coconut flavor, in the third attempt I used monk fruit sugar for the first time and I didn’t put enough so it was insipid and super tart because of the raspberries and it was until this fourth attempt that it was spot on.
The initial idea was to make mamey jelly which my dad loves, but I bought mamey three times, yes, three times, and all three times they were rotten, so I switched to berries.
You can use the mix of berries you want, as long as you respect the 700 gr in total. You can use cherries, blackberries, strawberries or whatever you like the most, which was what I did during the various attempts; depending on what I had in my fridge was the combination I used.

INGREDIENTS
12 servings
500 gr fresh blueberries
200g fresh raspberries
1 can coconut cream (I use Thai Heritage)
1 1/2 cups water
1/2 cup monk fruit sugar or standard sugar
35g gelatin
2 tablespoons water
1 pinch sea salt
INSTRUCTIONS
- Blend blueberries and raspberries with water, salt, sugar and coconut cream
- Strain and return to the blender
- Hydrate the gelatin with 2 tablespoons of water
- Let rest until fluffy. Melt it in the microwave careful to not burn it
- Add the gelatin to the blender and blend until everything is integrated
- Empty into a mold and refrigerate until firm
- Serve
