Ayer estaba chismeando en Facebook cuando una mamá de uno de los tantos grupos en los que estoy comentó que había hecho unas crepas y se me antojaron cañón. Así que hoy ése fue el desayuno.
Hoy el día empezó más temprano que de costumbre, pues aunque los enanos se levantaron a las 7:30 am, a las 9 yo ya estaba bañada y semi arreglada, (lo cual nunca pasa hasta como medio día que ya acabé de hacer la comida), porque el conejo de Pascua había llegado a la privada. Así que aunque apenas son las 11 am, yo siento que son las 3 de la tarde y en 1 hora empiezo con la comida de regreso de vacaciones y la crepa con huevo es una súper buena opción, porque te sientes satisfecho y con energía para la mañana con los enanos.
Ya tenía las crepas hechas de mi receta de crepas básicas de dos tipos y sólo las descongelé en el comal y las rellené de huevo con zanahoria y frijoles porque la combinación me encanta y al combinar el sarraceno con el frijol tengo proteína vegetal. La salsa de poblano es muy rápida y deliciosa y es de esas salsas que puedes usar para quinoa, pasta, pollo o pescado. Es de las favoritas de mi esposo y justamente como más le gusta es en huevo. La idea de la zanahoria y el frijol no le rayó, porque aunque dice que come mucha verdura, la verdad es que sólo en sopa, por lo que como a mis enanos, se la tengo que estar escondiendo.
Como todos los días empecé con el shot de jengibre y mi jugo verde de los cuales pongo las recetas abajo porque me las han pedido, pero la idea del shot y del jugo es irle variando a las verduras y frutas, sólo agregar una fruta por jugo o tratar de que no tenga. Si eres nuevo en esto de los jugos te recomiendo agregar una manzana o naranja que cortan un poco el sabor tan “verde” de las verduras y siempre agregar limón para hacerlo más amigable y agregar los beneficios que tiene.
El shot también es cosa de variarlo y ver cómo te gusta más; yo me he vuelto fan de ponerle manzana o naranja, pero le puedes poner piña, uvas, melón, pera o lo que tengas en tu casa.
Hoy por la noche subo las recetas de la comida que serán fetuccini en salsa de hongos, atún marinado oriental y puré de papa con coliflor.

Crepas rellenas de huevo en salsa poblana
INGREDIENTES CREPAS
3 porciones
3 crepas básicas
5 huevos orgánicos batidos
1 taza de zanahoria finamente picada
½ taza de frijoles enteros de la olla
Sal, pimienta, cebolla en polvo y perejil picado
INGREDIENTES SALSA POBLANA
3 chiles poblanos tatemados, pelados, desvenados y sin semillas en rajas
¼ de taza de cebolla en rodajas
¼ taza perejil
2 cucharadas echalote en rodajas
1 cucharadita de crema baja en grasa
1 taza de caldo de pollo o verdura orgánico
Aceite de coco
Sal y pimienta al gusto
INSTRUCCIONES
- Poner a freír la cebolla y echalote en poco aceite de coco por 5 minutos
- Agregar los chiles poblanos y freír por 3 minutos
- Agregar el perejil y freír por 3 minutos
- Agregar el caldo de pollo o verdura y dejar cocinar por 5 minutos
- Sazonar con sal y pimienta
- Agregar la crema
- Licuar
- Regresar al sartén y dejar cocinar
- Saltear la zanahoria y los fijoles por 3 minutos
- Mezclar los huevos con el perejil picado, sal y pimienta y freír en aceite de coco y agregar a la zanahoria y frijoles
- Calentar las crepas en el comal
- Rellenar las crepas con el huevo y cubrir con la salsa
- La salsa que sobre la puedes guardar en el refri por una semana
SHOT DE JENGIBRE
Poner en el extractor 5 cm de jengibre lavado fresco, una manzana o media naranja o ¼ taza de piña. Agrega una cucharadita de cúrcuma o pimienta de cayena y toma inmediatamente en ayunas.
JUGO TIPO V8 NATURAL
Pon en el extractor 5 jitomates chicos o 3 grandes, 2 zanahorias, medio pepino, 1 tallo de apio, medio betabel, un puño de cilantro. Agrega el jugo de un limón, sal de mar y pimienta y disfruta. Lo debes tomar antes de cualquier alimento en la mañana o a medio día.

Egg stuffed crepes with poblano sauce
Yesterday, while I was wasting time in Facebook, a mom of one of the many groups I am part of said she made crepes and I it gave me a big craving, so that was today’s breakfast.
Today the day started earlier than normal, since, even when the munchkins woke up at 7:30 am, I was showered and semi ready at 9, (which never happens before noon when I finish making lunch), but the Easter bunny had come to the common area of the houses. So, it is 11 am but I feel like it is 3 pm and in 1 hour I have to start cooking lunch. This crepe is a great option to feel satisfied and have the energy to deal with the little ones.
The crepes where ready from my basic crepe recipe two ways, so I just defrosted them in a comal and stuffed them with eggs with carrots and beans, because I love the combination and when you mix sarrasin and beans you get protein. The poblano sauce is quick to make and delicious and it is one of those sauces you can put on quinoa, pasta, chicken or fish. It is one of my husband’s favorite and he likes it better on eggs. The idea of the carrots and beans didn’t make him very happy, because even when he says he eats tons of veggies, he only does so in soup, hence I have to hide them just like I do with the munchkins.
As usual, I started with my ginger shot and veggie juice, and the recipes are below because some people have asked for them. But the idea of both the shot and the juice is to vary the fruits and veggies and finding what you like best. For the juices you should only add one fruit per juice or try to avoid fruit. If you are new to this juicing thing, I do recommend adding an apple or an orange to tone down the “greenness” of the juice and always adding lemon to cut strong flavors like cabbage of broccoli and have the benefits of the lemon.
I have become a fan of the ginger shot with apple or orange, but feel free to add whatever you like; pineapple, grapes, melon, pear or whatever you have at home.
Tonight I will post the three recipes from lunch which will be pasta in mushroom sauce, oriental marinated tuna steaks and cauliflower and potato mash.

Eggs stuffed crepes in poblano sauce
CREPES INGREDIENTS
3 servings
3 basic crepes
5 organic eggs beaten
1 cup finely chopped carrot
½ cup cooked whole beans
Salt, pepper, dried onion and chopped parsley
INGREDIENTS POBLANO SAUCE
3 poblano chilies burnt, peeled, deveined, seeded and chopped
¼ cup sliced onion
¼ cup parsley
2 tablespoons slices shallot
1 teaspoon low fat cream
1 cup organic chicken or vegetable stock
Coconut oil
Salt and pepper
INSTRUCTIONS
- Fry onions and shallot in a little coconut oil
- Add poblano chilies and fry for 3 minutes
- Add parsley and fry for 3 minutes
- Add stock and cook for 5 minutes
- Season
- Add cream
- Blend sauce and return to pan
- Sauté carrots and beans for 3 minutes
- Mix eggs with chopped parsley, salt and pepper and add to the carrot and beans
- Cook eggs
- Heat crepes in comal
- Stuff crepes with eggs and cover in sauce
- You can store the remaining sauce for up to 1 week in the fridge
GINGER SHOT
Put 5 cm fresh washed ginger in a juicer and add an apple, half an orange or ¼ cup pineapple. Add a teaspoon of turmeric or cayenne pepper and drink immediately before breakfast.
JUGO TIPO V8 NATURAL
Put 5 small tomatoes or 3 large ones, 2 carrots, half a cucumber, 1 celery stalk, half beet and a handful of cilantro in a juicer. Add juice of one lemon, sea salt and pepper and enjoy. You should drink it before eating anything.
