Esta receta se la debo a la salsa de pasilla. El fin de semana fuimos a desayunar a Saks, un restaurante que nos encanta porque además de que la cocina es muy rica, tienen paquetes buenísimos de desayuno y el pan dulce (básico para que mi esposo apruebe un desayuno) es delicioso (si van prueben la empanada de guayaba y los huevos de la campiña).
El caso es que mi esposo pidió unos chilaquiles con tres salsa y una de esas tres salsas era de chile pasilla. A él le supo diferente a la salsa pasilla normal, y cuando me pidió que la probara, inmediatamente me supo a piloncillo, estaba deliciosa y ¡PUM! Inmediatamente pensé en hacer tortitas de huauzontles.
Siempre he tenido algo con que los ingredientes se usen de una sola forma como el huazontle. Siempre que buscas opciones para usarlos, sólo aparecen opciones de tortitas de huauzontle capeadas, rellenos de queso y en salsa roja o de pasilla. Es un desperdicio; el huazontle es una maravilla nutrimental pues de ahí sale el amaranto, tiene muchísima proteína, ayuda a prevenir el cáncer, es alto en calcio, hierro y fósforo. Y es delicioso.
El caso es que quería probar otra forma de hacer las tortitas. Primero, quise quitarle el capeado, porque es demasiada grasa para freír, además de harina. El relleno siempre, SIEMPRE, es de queso, y aunque soy fan quise cambiarle un poco con el queso de cabra, pues hace tiempo probé unas tartitas de queso de cabra con huauzontles y combinan de maravilla, y le agregué los champiñones porque combinan súper bien con el chile pasilla.
Hice la salsa de chile pasilla con piloncillo y ¿qué creen? Estas tortitas quedaron deliciosas. El queso de cabra combina súper bien, y los hongos le van muy bien. El piloncillo sabe, pero no es súper fuerte, así que le da un súper sabor a la salsa. En corto: ¡TIENEN QUE PROBAR ESTAS TORTITAS!

Tortitas de huauzontle rellenas de hongos y queso de cabra
INGREDIENTES
8 tortitas grandes
1 kg huazontles limpios sin ramas duras ni hojas
1 taza caldo de pollo orgánico
50 gr cebolla en trozo
3 tazas agua
4 huevos separados
1 cucharadita perejil seco
8 rebanadas queso de cabra (Yo usé queso de cabra con chipotle) congeladas
150 gr champiñones finamente picados
200 gr ejotes a la mitad y cocidos
2 cucharadas cebolla finamente picada
Sal y pimienta al gusto
SALSA
12 chiles pasilla sin semillas
6 jitomates saladet
100 gr cebolla en trozo
30 gr cebolla rebanada
40 gr piloncillo en trozo
4 tazas agua
INSTRUCCIONES
- Hervir los huazontles con el caldo, agua, cebolla y un poco de sal
- Colar y dejar enfriar
CHAMPIÑONES
- Calentar un poco de aceite
- Freír la cebolla y champiñones en un poco de ghee hasta que el líquido se evapore
- Sazonar con sal y pimienta al gusto
TORTITAS
- Batir las claras a punto de turrón (picos firmes y no se cae si volteas el bowl)
- Agregar las yemas y batir
- Agregar sal y pimienta al gusto y el perejil seco
- Agregar los huauzontles e incorporar poco a poco con una espátula
- En un sartén grande, calentar un poco de aceite de aguacate
- Con una cuchara para helado, tomar la mezcla de huauzontles y poner en el sartén
- Rápidamente poner la rebanada de queso de cabra congelado y una cucharada de los champiñones
- Con la misma masa cubrir el queso y champiñones y freír por ambos lados hasta que estén doradas
SALSA
- Hervir los chiles, jitomates, piloncillo y 100 gr de cebolla con el agua
- Licuar
- Freír la cebolla rebanada en un poco de aceite de aguacate
- Colar la salsa y agregarla al aceite
- Agregar los ejotes
- Sazonar con sal y pimienta a gusto
- Dejar hervir por 5 minutos
- Agregar las tortitas y dejar cocinar por 5 minutos
- Servir

Huauzontle pancakes stuffed with mushrooms and goat cheese
I owe this recipe to the pasilla sauce. This past weekend we went to Saks for breakfast, a restaurant that we love because in addition to having delicious food, they have very good breakfast packages and the sweet rolls (a must for my husband to approve a restaurant for breakfast) are delicious (if you go, try the guava empanada and the eggs campiña).
The thing is my husband ordered chilaquiles with three different sauces and one of those three sauces was pasilla chili. He said it was different from the normal pasilla sauce, and when he asked me to try it, I immediately tasted piloncillo which was delicious and PUM! I immediately thought about making huauzontles cakes.
I’ve always had issues with ingredients being used in a single way like huauzontle. Whenever you’re looking for options to cook them, the only options I find are huauzontle cakes which are battered, stuffed with cheese and soaked in red or pasilla sauce. It is a waste; huauzontles are a nutritional wonder from which amaranth comes from: it has a lot of protein, it helps prevent cancer, it is high in calcium, iron and phosphorus. And it’s delicious.
The thing is, I wanted to try another way to make these huauzontle cakes. First, I wanted to take off the battering part, because it takes too much oil to fry, plus flour. The filling is always, ALWAYS, cheese, and although I am a fan, I wanted to change it a little with goat cheese, because a long time ago I tried some tartlets of goat cheese with huauzontles and they combine wonderfully, and I added the mushrooms because they combine well with the pasilla chili sauce.
I made the chili pasilla sauce with piloncillo and guess what? These cakes were delicious. Goat cheese combines super well, as well as the mushrooms. The piloncillo is there, but it’s not overpowering, so it gives the sauce a great flavor. In short: YOU HAVE TO TRY THESE CAKES!

Huauzontle cakes stuffed with mushrooms and goat cheese
INGREDIENTS
8 large cakes
1 kg clean huazontles with no hard branches or leaves
1 cup organic chicken broth
50 gr onion in chunk
3 cups water
4 eggs separated
1 teaspoon dried parsley
8 slices goat cheese frozen (I used goat cheese with chipotle)
150 gr finely chopped mushrooms
200 gr green beans in half and cooked
2 tablespoons onion, finely chopped
Salt and pepper to taste
SAUCE
12 seeded pasilla peppers
6 roma tomatoes
100 gr onion in chunk
30 gr onion sliced
40 gr piloncillo in a piece
4 cups water
INSTRUCTIONS
- Boil the huazontles with the broth, water, onion and a little salt
- Strain and leave to cool
MUSHROOMS
- Heat a little oil
- Fry the onion and mushrooms in a little ghee until the liquid evaporates
- Season with salt and pepper to taste
CAKES
- Beat the whites to the point of nougat (firm peaks and does not fall if you flip the bowl)
- Add the yolks and beat
- Add salt and pepper to taste and dried parsley
- Add the huauzontles and gradually incorporate with a spatula
- In a large frying pan, heat a little avocado oil
- With an ice cream spoon, take the huauzontles mixture and put in the pan
- Quickly put the slice of frozen goat cheese and a tablespoon of the mushrooms
- Using the same dough, cover the cheese and mushrooms and fry on both sides until golden brown
SAUCE
- Boil the chilies, tomatoes, piloncillo and 100 gr onion with the water
- Blend
- Fry the sliced onion in a little avocado oil
- Strain the sauce and add it to the oil
- Add the green beans
- Season with salt and pepper to taste
- Bring to boil for 5 minutes
- Add cakes and cook for 5 minutes
- Serve
