Esta semana ha estado de locos, pues es el cumpleaños del enano el sábado y va a haber jolgorio familiar. Mi esposo con trabajo hasta el tope, que ha hecho que cambiemos toda la planificación y no ha comido en la casa esta semana y pues a seguir con los chamacos. Así que hoy decidí hacer algo sencillo, ya que me toca hacer los pasteles y demás monerías para la fiesta y ya puedo ver mi friega de mañana.
Los tacos dorados son una delicia y en serio me pueden poner de mi mejor humor el día que sea. Obvio, hay que tratar de comer cosas fritas seguido, ya que es aceite que nuestro cuerpo guarda. Pero el chiste está en saber freír. Hay que esperar a que el aceite esté requete caliente para que en cuanto la comida lo toque, éste lo selle, de otra forma dejamos que la comida absorba el aceite y nos quedamos con comida que deja grasa en todos lados. Además de escoger muy bien el aceite para cocinar; debe ser uno que tenga un punto de humo (cuando ya se quema) muy alto para que no cambie su composición y se vuelvan malos para la salud y nunca, nunca, NUNCA reusar el aceite que se usó para freír. No puede ser de oliva porque se quema súper rápido, y tratar de que sea de aguacate o coco que aguantan muy bien las temperaturas y no cambian su composición fácilmente.
Yo los iba a hacer solo de frijol con espinaca, pero mi enana me pidió que le hiciera unos de papa. Así que de aquí que sean de dos formas; frijol con espinaca y chipotle y de papa con zanahoria.
Los rellenos se hacen muy rápido y les puse poco aceite para freír, no a fritura profunda porque es demasiado aceite y sólo buscamos que la tortilla se dore un poco.
Yo los acompaño con espinaca y lechuga picada y salsa y quedan maravilloso.

Tacos dorados de dos formas
INGREDIENTES RELLENO DE PAPA
Hace 6 a 8 tacos
1 papa mediana cocida y hecha puré
¾ taza zanahoria rallada muy finamente
¼ taza cebolla finamente picada
1 jitomate mediano sin semillas y en cubos pequeños
Aceite de coco
Sal y pimienta al gusto
INGREDIENTES RELLENO DE FRIJOL
Hace de 5 a 6 tacos
1 taza de frijol cocido
2 tazas de espinaca finamente picada
¼ taza cebolla finamente picada
1 cucharadita de chipotle adobado molido
INGREDIENTES PARA LOS TACOS
10 tortillas de maíz
Palillos para cerrar
2 cucharadas de aceite de coco para freír
INSTRUCCIONES TACOS DE FRIJOL
- En poco aceite de coco freír la cebolla por 3 minutos
- Agregar los frijoles y cocina por 3 minutos
- Agregar la espinaca y chipotle
- Sazona
- Calentar 5 tortillas en el micro por 15 segundos para que estén aguaditas. Si lo haces en comal se deshacen a la hora de hacer los tacos
- Poner suficiente relleno, cerrar los tacos con palillos
- Freír en las 2 cucharadas de aceite de coco, hasta que la tortilla esté dorada
- Secar en toallas de papel el exceso de grasa (no debería ser mucho si la temperatura del aceite es adecuada)
INSTRUCCIONES TACOS DE PAPA
- Freír la cebolla en poco aceite de coco por 3 minutos
- Agregar la zanahoria y cocinar por 3 minutos
- Agregar la papa hasta que se caliente
- Sazonar
- Calentar 5 tortillas en el micro por 15 segundos para que estén aguaditas. Si lo haces en comal se deshacen a la hora de hacer los tacos
- Poner suficiente relleno, cerrar los tacos con palillos
- Freír en las 2 cucharadas de aceite de coco, hasta que la tortilla esté dorada
- Secar en toallas de papel el exceso de grasa (no debería ser mucho si la temperatura del aceite es adecuada)
Servir los tacos con salsa roja y/o verde y lechuga y espinacas picadas

Golden tacos two ways
This week has been crazy! It is my little one’s birthday this Saturday and we are having a party. My husband has had a ton of work, changing all the planning and he has not been having lunch at home this week, and I have to keep up with the munchkins. So, today I decided to make something simple for lunch since I have to bake the cakes and other treats and I can predict the hard work for tomorrow.
Golden tacos are a wonderful thing and can improve my mood any day. Obviously, it is not ideal to eat fried stuff often, but the trick is knowing how to fry stuff. You have to make sure the oil is really hot, so it seals the food instantly. If not, you are left with soggy, oily food that soaked all the oil because it wasn’t hot enough. You also have to choose the right oil to make sure the smoking point is high (when it burns) so it won’t change its composition making it unhealthy for us, and never, never, EVER reuse oil you used for frying. It cannot be olive oil because it has a very low smoking point, so try using avocado or coconut oil.
I was going to fill them with beans and spinach only, but munchkin 1 asked me to make some with potato, so that is where the 2 ways come from: beans with spinach and chipotle, and potato with carrot.
The filling is done very quickly and I used little oil, not deep fried since it is too much oil and we are only expecting to get the tortilla to brown a bit.
I serve them with chopped spinach and lettuce and red chili sauce and they are wonderful.

Golden tacos two ways
POTATO FILLING INGREDIENTS
6 to 8 tacos
1 medium potato cooked and mashed
¾ cup finely shredded carrot
¼ cup finely chopped onion
1 seeded and cubed medium tomato
Coconut oil
Salt and pepper
BEAN FILLING INGREDIENTS
Makes 5 to 6 tacos
1 cup cooked beans
2 cups finely chopped spinach
¼ cup finely chopped onion
1 teaspoon blended chipotle chili
INGREDIENTS FOR TACOS
10 corn tortillas
Toothpicks to close tacos
2 tablespoons coconut oil for frying
INSTRUCTIONS FOR BEAN TACOS
- Fry onion in little coconut oil for 3 minutes
- Add beans and cook for 3 minutes
- Add spinach and chipotle
- Season
- Heat 5 tortillas in the microwave to make them soft
- Put enough filling to make the taco
- Close tacos with toothpicks and fry in coconut oil until lightly brown
- Put in paper towels to remove excess oil (should be very little if oil is at right temperature)
INSTRUCTIONS FOR POTATO TACOS
- Fry onion in little coconut oil for 3 minutes
- Add carrot and cook for 3 minutes
- Add mashed potato until hot
- Season
- Heat 5 tortillas in the microwave to make them soft
- Put enough filling to make the taco
- Close tacos with toothpicks and fry in coconut oil until lightly brown
- Put in paper towels to remove excess oil (should be very little if oil is at right temperature)
Serve tacos with Green and/or red sauce, chopped lettuce and spinach
