Cada mes trato de tener una nueva receta de tamales para agregar al menú, y con eso son muchas pruebas de salsas, combinaciones y ver si sabe mejor en hoja de maíz o de plátano. Ahora se me metió la idea de hacer tamales dulces de cajeta con nuez, peeeeero no quiero usar cajeta comercial, así que hice cajeta en mi casa, y quedó deliciosa, pero el problema es que tengo en mente un sabor que quiero y nada más no lo conseguía. Usé leche de vaca, porque es súper difícil conseguir leche de cabra en la ciudad.
Hace unas semanas mi esposo y yo fuimos a desayunar como antes de tener hijos (quienes se quedaron a dormir con los abuelos) tranquilos, sin prisas, en una mesa chica, y sobre todo caliente y en menos de 2 horas. Para cerrar la mañana con broche de oro, en el local de junto había un letrerote que anunciaba que en esa casa se vendían productos de cabra frescos, naturales y de cabras de libre pastoreo. Obvio, llamé y de inmediato compré todo, y con todo me refiero a TODO: quesos de distintos tipos, yogurt, y mi súper leche de cabra para hacer cajeta. Y ¿qué creen? Me quedó maravillosa y lista para hacerla en tamales o venderla solita. Como siempre la prueba de fuego son mis chamacos, pues son bastante exigentes, pero súper honestos y sé perfecto cuando se emocionan por una receta o de plano me dan el avión. Con esta cajeta fueron felices. Y ya la próxima semana empiezo pruebas de tamales de cajeta casera de leche de cabra. Si alguien quiere el dato de la granja de donde me trajeron los productos de cabra, contácteme y con gusto les doy los datos.
Esto viene al caso, porque esta receta de hamburguesas de salmón la serví con un pan multigrano del que siempre hay en mi casa, con queso de cabra con chipotle de mi súper nuevo descubrimiento de productos de leche de cabra y quedó buenísima. El queso de cabra con chipotle me rayó y lo he usado en todo; en quiche, en fritata, rellenando jitomates, en sándwiches y obvio en estas hamburguesas de salmón.
Los chamacos se comieron estas hamburguesas como croquetas pues la idea de la arúgula no les gustó y el queso de cabra picaba un poco, así que se las serví con un aderezo de yogurt y aguacate y fueron felices.

Hamburguesas de salmón
INGREDIENTES
14 hamburguesas
750 gr filetes de salmón sin piel cocinados en poco aceite y desmenuzados
¾ taza panko o pan molido integral
1/3 taza cebolla finamente picada
½ cucharadita ajo en polvo
1 ½ cucharada cebollín picado
1 ½ cucharada perejil seco
1 ½ cucharada eneldo picado
El jugo de 2 limones
Sal y pimienta al gusto
Pan multigrano para servir
Queso de cabra para servir (yo usé queso de cabra con chipotle)
Arúgula para servir
Aguacate en cubos para servir
INSTRUCCIONES
- Mezclar todos los ingredientes
- Sazonar al gusto
- Freír una hamburguesita de prueba para probar la sazón y el nivel de especies. Ajustar los sazonadores y especies
- Formar las hamburguesas y freír en el aceite de oliva
- Servir con el pan, el queso de cabra, arúgula y aguacate

Salmon burgers
Every month I try to come up with a new recipe for tamales to add to the menu, and with that I do a lot of sauce tests, combinations and test if they taste better with corn husks or banana leaves. Now, I have the idea to make cajeta sweet tamales with pecans, buuuut I do not want to use commercial cajeta, so I started making my own, and even though it was delicious, I have a very specific taste in mind that I was not achieving. I kept using cow milk, since getting goat milk in the city is quite difficult.
A few weeks ago, my husband and I went to have breakfast the way we used to before having kids (whom stayed with the grandparents); quiet, without rushing, with hot food and in less than two hours. To close the morning with a bang, I saw that the store next to the restaurant there was a huge sign, advertising that they had fresh, natural goat milk products from free range goats. I obviously, I called immediately and got everything, and I mean EVERYTHING: cheeses of all kinds, yogurt and my super milk to make cajeta. And guess what? It was wonderful and ready to make tamales or sell it on its own. As usual, the fire test were my kids, since they are pretty demanding, and super honest, so I know perfectly well when they love a recipe or when they are ignoring me. They were truly happy with this cajeta. And next week I will start trials for the tamales. If anyone wants the info on the goat products farm, let me know and I will gladly provide it.
This whole story comes in handy, because I served these salmon burgers with the multigrain bread I always have at home, and the chipotle goat cheese from my super new discovery and it was really good. I am obsessed with the chipotle goat cheese and have been using it on everything; quiche, fritata, stuffing tomatoes, sandwiches and obviously these salmon burgers.
The little ones devoured these like croquettes, for they were not crazy about the arugula on them or the goat cheese that was a bit spicy, so I made them a yogurt and avocado dressing and they were very happy.

Salmon burgers
INGREDIENTS
14 burgers
750 gr salmon filets without skin, cooked with little oil and shredded
¾ cup panko or whole wheat bread crumbs
1/3 cup onion finely chopped
½ teaspoon garlic powder
1 ½ tablespoon chives chopped
1 ½ tablespoon parsley chopped
1 ½ tablespoons dill chopped
The
1/3 taza cebolla finamente picada
½ cucharadita ajo en polvo
1 ½ cucharada cebollín picado
1 ½ cucharada perejil seco
1 ½ cucharada eneldo picado
The juice of 2 lemons
Multigrain bread to serve
Goat cheese to serve
Arugula to serve
Avocado to serve
Salt and pepper to taste
INSTRUCTIONS
- Mix all ingredients
- Season to taste
- Fry a little burger to taste seasoning and spiced. Adjust seasonings and spices
- Form burgers and fry with olive oil
- Serve with multigrain bread, goat cheese, arúgula and avocado
