Ya esta semana estamos en todo los rituales de fin de año más graduación más el cumpleaños de la enana.
También estamos preparando el verano. Mis chamacos acaban su primer año escolar en Canadá en una semana y nos esperan 9 semanotas de vacaciones. Para 5 de esas semanas tenemos cursos de verano, y están muy emocionados porque el enano se va a uno de futból y mi enana a uno de arte y luego coinciden en unos de actividades de todo tipo.
Para las tardes y las semanas que no tienen cursos de verano ya estoy armada con libros. Mi hija de casi 11 está leyendo una serie que la trae picadísima que se llama The Keeper of the Lost Cities y van en el 9 (https://amzn.to/42QsIGU) y otra de manga para niños que se llama Amulet y que pronto lanzará el libro 9 (https://amzn.to/44acXMk) y para el enano de 8 ya tengo todos los de Dave Pilkey que escribe Capitán Calzoncillos y Dogman (https://amzn.to/3Nj2EOV) y está empezando The Magic Tree House que es otra serie (https://amzn.to/3PkSDn6). Toda esta lectura me tienen feliz porque me había costado bastante que tomaran el hábito de la lectura y ahora ya es parte del día a día y sin recordarles o ponerles horarios específicos.
También tenemos cosas planeadas como playdates, carnes asadas y días en que puedan hacer nada para recargar pilas, además de que en esta temporada Toronto y sus alrededores son una olla de eventos, festivales, pop-ups y granjas que ir a conocer y no tenerlos en la casa todo el tiempo.
Una vez a la semana, que es la idea original, pero veremos cómo se da, quieren clases de cocina, pero eso depende más de mí, así que veremos
Pero en el día a día sigo haciendo recetas sencillas; yo sé, sencillas para mí, no para todo mundo, pero cuando llevas ya casi 30 años cocinando ya te sabes algunos trucos que te hacen las recetas más fáciles.
Esta es una de esas recetas. Otra con albóndigas, esta vez de res. En mi casa, el caldillo, sopa o salsa de frijol y el frijol refrito son sagrados, así que esta vez hice una sopa de frijol más espesa con mucha zanahoria con pasta munición que son unas mini bolitas de pasta y que puede ser sustituida por orzo o mini estrellitas y agregué las albóndigas que horneé.
Un solo plato con carbohidratos, proteína y verdura, así que cociné una sola cosa, el cochinero fue poco porque usé un sartén y una charola y todos estaban con la barriga llena y corazón contento.

Sopa de frijol con verdura, pasta y albóndigas
INGREDIENTES
5 porciones
Albóndigas
500 gr carne de res molida orgánica
¼ taza pan molido
3 cucharadas cebolla finamente picada
½ cucharadita comino molido
Sal y pimienta al gusto
Caldo
4 jitomates roma en cubos grandes
2 tazas frijoles de la olla
2 tazas líquido en donde se cocieron los frijoles
1 taza pasta de munición
1 taza zanahoria picada
1 cucharadita comino molido
Sal y pimienta al gusto
2 cucharadas de aceite de aguacate
30 gr cebolla
INSTRUCCIONES
- Precalentar el horno a 180°C
- Mezclar todos los ingredientes de las albóndigas y sazonar
- Hacer una prueba, friendo un poquito de la carne
- Si es necesario sazonar otra vez
- Formar las albóndigas y hornear hasta que estén cocidas
- Mientras las albóndigas se cuecen, en una olla calentar el aceite de aguacate
- Agregar la mitad de los frijoles
- Agregar la cebolla y cocinar por 5 minutos
- Agregar el resto de los frijoles y cocinar hasta que hiervan
- Agregar los jitomates y cocinar hasta que se suavicen
- Sazonar con sal y pimienta al gusto
- Licuar la mezcla de frijoles con el caldo de los frijoles
- Calentar la olla con otro poco de aceite
- Freír la zanahoria hasta que empiece a suavizarse
- Agregar la pasta de bolitas o munición
- Agregar el caldo de frijol y cocinar por 10 minutos
- Agregar las albóndigas a la olla y dejar cocinar por 5 minutos
- Servir

This week we are in all the rituals of the end of the year plus graduation plus the my daughter’s birthday.
We are also preparing for summer. My kids finish their first school year in Canada in a week and 9 weeks of vacation await us. For 5 of those weeks, we have summer courses, and they are very excited because my son goes to a football camp and my daughter to an arts camp and then they coincide in a few weeks of a very varied camp with all kinds of activities.
For the afternoons and weeks when they do not have summer courses I am armed with books. All this reading makes me happy because it took a lot of work on my part for them to take the habit of reading and now it is part of the day to day without reminding them or putting specific schedules.
We also have things planned like playdates, bbqs and days when they can do nothing to recharge batteries, plus this season Toronto and its surroundings are a pot of events, festivals, pop-ups and farms to go to know and not have them in the house all the time.
Once a week, which is the original idea, but we’ll see how it evolves, they want cooking classes, but that’s more up to me, so we’ll see.
On a day-to-day basis I still make simple recipes; I know, simple for me, not for everyone, but when you have been cooking for almost 30 years you know some tricks that make recipes easier.
This is one of those recipes. Another one with meatballs, this time beef. In my house, bean caldillo, soup or sauce and refried bean are sacred, so this time I made a thicker bean soup with a lot of carrot with ammunition pasta which are mini balls of pasta and that can be replaced by orzo or mini stars, and I added the meatballs that I baked.
A single dish with carbohydrates, protein, and vegetables, so I cooked only one thing, the mess was minimum because I used a pan and a tray, and everyone had a full belly and happy heart.

Bean soup with vegetables, pasta and meatballs
INGREDIENTS
5 servings
Meatballs
500 gr organic ground beef
1/4 cup breadcrumbs
3 tablespoons finely chopped onion
1/2 teaspoon ground cumin
Salt and pepper to taste
Broth
4 roma tomatoes in large chunks
2 cups beans from the pot
2 cups liquid where the beans were cooked
1 cup tiny pasta
1 cup chopped carrot
1 teaspoon ground cumin
Salt and pepper to taste
2 tablespoons avocado oil
30 gr onion
INSTRUCTIONS
- Preheat oven to 180°C
- Mix all the ingredients of the meatballs and season
- Do a test, fry a little bit of the meat
- If it is necessary season again
- Form the meatballs and bake until cooked
- While the meatballs are cooking, in a pot heat the avocado oil
- Add half of the beans
- Add the onion and cook for 5 minutes
- Add the rest of the beans and cook until boiled
- Add the tomatoes and cook until softened
- Season with salt and pepper to taste
- Blend the bean mixture with the bean broth
- Heat a pot with a little oil
- Fry the carrot until it begins to soften
- Add the pasta
- Add the bean broth and cook for 10 minutes
- Add the meatballs to the pot and let cook for 5 minutes
- Serve
