Esta vez que viajamos a México me traje 10 docenas de tortillas de Cal y Maíz, que tiene maíces nativos de cada estado y que van desde rojo y negro, hasta azul y blanco. Para mí son de las mejores tortillas que he probado. Las de City Market echadas a mano también son ricas y de ésas me traje 3 kilos, más 2 kilos de tortilla taquera (son más chicas), para hacer tacos de canasta más 5 paquetes de tortillas de harina tipo Hermosillo para mi esposo.
En cuanto regresamos abrí el primer paquete con la confianza de que la familia de mi esposo viene en abril y tienen Cal y Maíz en la esquina de su casa (suertudotes) y me pueden traer otro shingo de tortillas maravillosas para el alma.
Este paquete lo usé para hacer estos tacos rojos tipo norteño. Los vi en una revista y neta no tienen idea mi obsesión. Hasta le escribí a una amiga norteña para que me consiguiera la receta de su mamá. En algunos lados les dicen enchiladas queretanas, en otras tacos rojos de Tampico y otros nombres, pero las adapté a lo que sí se come en mi casa.
Normalmente se rellenan de queso o papa con zanahoria, me fui por la verdura, en algunos lados usan chile pasilla para el adobo y yo usé guajillo por los gustos de mi familia.
Debo decir que amé hacer esta receta, me encantan los adobos y las recetas que naturalmente son vegetarianas, que en este caso puedes hacerla vegana si no le pones el queso o crema para servir. Yo le puse aguacate y lechuga a las mías sin la crema ni el queso para hacerlas veganas y darle un respirito a mi panza.
Mi enano y yo hacíamos bailes de felicidad con mis tacos rojos, mi esposo e hija hubieran preferido que apachurrara las verduras antes de rellenar, pero en general les gustó mucho la receta y las tortillas cubiertas con el adobo.
Las papas y zanahorias las cocí al sartén tapando para que el vapor ayude a cocerlas más rápido. Las tortillas se ahogan en un adobo de puro chile guajillo con cebolla, comino, sal y pimienta y al armarlas las sirves con la lechuga y si quieres, queso y crema o aguacate y lechuga.

Tacos rojos norteños
INGREDIENTES
12 tacos
500 gr papas en cubos chicos
200 gr zanahorias en cubos chicos
50 gr cebolla finamente picada
2 cucharadas aceite de aguacate
5 chiles guajillos sin semillas
Agua hirviendo para rehidratar los chiles
½ cucharadita comino molido
30 gr cebolla en trozos
12 tortillas de maíz
Lechuga para servir
Queso fresco picado para servir
Crema para servir
Sal y pimienta al gusto
INSTRUCCIONES
- Poner los chiles a hidratar en el agua hirviendo
- En un sartén grande calentar el aceite de aguacate
- Freír la cebolla por 2 minutos
- Agregar las papas y zanahorias en cubos
- Freír por 10 minutos moviendo constantemente
- Sazonar con sal y pimienta al gusto
- Tapar y dejar cocinar moviendo constantemente hasta que la verdura esté cocida pero no muy suave (puedes hacerla más suave y apachurrarla ligeramente)
- Licuar los chiles hidratados, 30 gr de cebolla, ½ taza del agua donde se hidrataron los chiles, comino, sal y pimienta al gusto
- En un sartén calentar 1 cucharadas aceite de aguacate
- Freír los chiles licuados hasta que cambie de color y empiece a espesar
- Poner 3 cucharadas del adobo en las papas y zanahorias y mezclar
- Calentar las tortillas
- Pasar las tortillas calientes por el adobo
- Rellenar con las verduras calientes
- Cerrar
- Servir con la lechuga picada, queso y crema

Northern red tacos
This time we went to Mexico I brought 10 dozen tortillas from Cal y Maíz, which has native corn from each state ranging from red and black, to blue and white. For me these are one of the best tortillas I have ever had. The handmade City Market ones are also delicious and I brought 3 kilos, of those plus 2 kilos of tortilla taquera (much smaller), to make tacos de canasta plus 5 packages of flour tortillas Hermosillo style for my husband.
As soon as we returned I opened the first package with the confidence that my husband’s family is coming in April and they have Cal y Maíz in the corner of their house (lucky) and they can bring me another load of wonderful tortillas for the soul.
I used this package of tortillas to make these red northern tacos. I saw them in a magazine, and I became obsessed. I even wrote to a northern friend to get me her mom’s recipe. In some places they call enchiladas queretanas, in others red tacos from Tampico and other names, but I adapted them to what we eat at home.
Normally they are stuffed with cheese or potato with carrot, and I went for the vegetables, in some places they use pasilla chile for the marinade and I used guajillo because we like it more.
I must say that I loved making this recipe, I love marinades and recipes that are naturally vegetarian, which in this case you can make vegan if you do not put the cheese or cream to serve. I added avocado and lettuce to mine without the cream or cheese to make them vegan and give my belly a break.
My son and I did happy dances with my red tacos, my husband and daughter would have preferred me to smash the vegetables a bit, but overall they really liked the recipe and the tortillas covered with the marinade.
I cooked the potatoes and carrots in the pan covering so that the steam helps cook them faster. The tortillas are drowned in a marinade of just guajillo chile with onion, cumin, salt and pepper and when you assemble them you serve them with lettuce and if you want, cheese and cream or avocado and lettuce.

Northern red tacos
INGREDIENTS
12 tacos
500 gr potatoes in small cubes
200 gr carrots in small cubes
50 gr finely chopped onion
2 tablespoons avocado oil
5 guajillo peppers, seedless
Boiling water to rehydrate chili peppers
½ teaspoon ground mexican cumin
30 gr onion in pieces
12 corn tortillas
Lettuce for serving
Chopped fresh cheese to serve
Serving cream
Salt and pepper to taste
INSTRUCTIONS
- Let the chilies rehydrate in the boiling water
- In a large skillet heat the avocado oil
- Fry the onion for 2 minutes
- Add the diced potatoes and carrots
- Fry for 10 minutes constantly moving
- Season with salt and pepper to taste
- Cover and let cook stirring constantly until the vegetable is cooked but not too soft (you can make it softer and smash it slightly)
- Blend the rehydrated chiles, 30 gr of onion, 1/2 cup of the water where the chiles were hydrated, cumin, salt, and pepper to taste
- In a frying pan heat 1 tablespoons avocado oil
- Fry the blended chiles until it changes color and begins to thicken
- Add 3 tablespoons of the marinade on the potatoes and carrots and mix
- Warm the tortillas
- Get the hot tortillas through the marinade and cover both sides
- Fill with hot vegetables
- Roll
- Serve with chopped lettuce, cheese, and cream
